El día de hoy quiero compartir con ustedes la preparación de una guarnición que pudiera llamar poco convencional (por lo menos en casa), ya que no la realizo con frecuencia, de hecho hace muchísimos años que no la preparaba, y todo comenzó en el supermercado mientras hacíamos las compras de la quincena, y en la sección de vegetales y verduras me encontré con unas mini calabazas de lo más cutes que por supuesto tenía que llevarme a casa aunque no tuviese idea de qué haría con ellas. Y sí gente, compro cosas solo porque se ven lindas y eso aplica incluso para la comida 🤣
El caso es que las llevé a casa y estuvieron cerca de una semana en el refrigerador, hasta que ayer me decidí a buscar algunas ideas para prepararlas y así fue como nacieron estas Calabacitas rústicas al tomillo y paprika, una guarnición que le vino perfecta a un pollo con cebollas y cerveza que preparé al horno.

It all started at the supermarket while we were doing our biweekly grocery shopping. In the produce section, I came across some super cute mini squash that I, of course, had to take home even though I had no idea what I’d do with them. And yes, folks, I buy things just because they look cute—and that goes for food, too 🤣
Anyway, I brought them home, and they sat in the fridge for about a week until yesterday, when I decided to look for some ideas on how to prepare them. That’s how these Rustic Mini Squashes with Thyme and Paprika came to be—a side dish that paired perfectly with the oven-roasted chicken with onions and beer I made.

Las bañé con una mezcla de aceite de oliva, ajo, paprika ahumada y tomillo y las llevé al horno hasta que tomaron un colorcito precioso y mi cocina olía delicioso. Al final quedaron con una consistencia muy suave y unos bordes tostaditos riquísimos, y por aquí leo la receta por si les provocan.
Among the different options I found online, I ended up combining several that suited my taste, so I decided to leave the skin on and cut them into rustic wedges. I tossed them in a mixture of olive oil, garlic, smoked paprika, and thyme, and baked them until they turned a beautiful golden color and my kitchen smelled delicious. Procedimiento / Procedure
Para comenzar la preparación de esta guarnición estrella, lo primero que haremos es lavar muy bien la piel de nuestras calabacitas, ya que no es necesario pelarlas, pues su piel es bastante delgada, además el dejarla nos ayuda a que las piezas mantengan su forma en la bandeja.
Lo que sigue es cortar nuestras calabacitas por la mitad a lo largo y con una cuchara pequeña, retiramos todas las semillas y la pulpa. Luego, corté cada mitad en tres piezas o gajos tratando de mantener el mismo grosor.
To begin preparing this star side dish, the first thing we’ll do is wash the skin of the zucchini very thoroughly. There’s no need to peel them, since their skin is quite thin; leaving it on also helps the pieces keep their shape on the baking sheet.
Next, cut the zucchini in half lengthwise and, using a small spoon, scoop out all the seeds and pulp. Then, cut each half into three pieces or wedges, trying to keep them all the same thickness.
Ahora es el momento de preparar la mezcla con la que vamos a cubrir los gajos de las calabacitas, y para esto, en un bol agregué el aceite de oliva junto con los ajos picaditos, el tomillo, la paprika, la sal y la pimienta y mezclé todo muy bien.
Now it's time to prepare the mixture we'll use to coat the zucchini slices. To do this, I added the olive oil to a bowl along with the finely chopped garlic, thyme, paprika, salt, and pepper, and mixed everything together thoroughly.
Seguidamente acomodé todos los gajos en una bandeja y con la ayuda de una brocha de cocina, barnicé cada trozo por todos sus lados para que se impregnaran muy bien con el sabor de las especias, y en este punto las llevé a horno precalentado a 200° donde ya se cocinaba mi pollo con cebolla y cerveza (luego les compartiré la receta). Metí la bandeja de las calabacitas y las dejé cocinar.
Next, I arranged all the slices on a baking sheet and, using a pastry brush, brushed each piece on all sides so they would absorb the flavor of the spices well. At that point, I placed them in an oven preheated to 200°, where my chicken with onions and beer was already cooking (I’ll share the recipe with you later). I put the tray of zucchini in the oven and let them cook.
