Hi, everyone! Another day on the blog, and another new recipe—but as you can see, it’s a pretty simple one. Yesterday was a busy day at home, and I wanted something quick to make—without sacrificing flavor, of course—so today I’m sharing a chicken curry rice recipe with you. It’s an easy recipe to prepare, with no weird or tedious steps, and it’s cooked in a single skillet, so we don’t make a big mess—making it the perfect recipe for the weekend.

This time, I only used two of the spices from my collection: curry and turmeric—the latter mainly to enhance the yellow color I wanted in my rice, since I was going for a strong curry flavor, so I kept the seasonings pretty basic, but I couldn’t leave out the onion, garlic, and hot chili pepper—which are my kitchen staples—along with some fresh herbs, which in this case was cilantro.

For this chicken curry rice, I decided to make it a little moister than usual, since I usually sauté the rice once the chicken has “dried out”, but this time I left quite a bit of the stew sauce in the pan and then added the rice, along with my usual amount of water—which, combined with the liquid from the stew, resulted in a “moist” rice. And now, without further ado, let’s get to the step-by-step instructions.

Procedimiento/Procedure

To start preparing our chicken curry rice, the first thing we'll do is finely chop the onion, the chili pepper, the garlic cloves, and the cilantro.

Next, add enough oil to a deep skillet to sauté the vegetables. Once the oil is hot, add the spices to the skillet and stir for a few seconds to release their flavors, then add the vegetables. Sauté over medium-high heat until the onion becomes translucent.

Once the sofrito is ready, add the chicken pieces (which have been seasoned with salt and pepper) and mix everything together well. Since I’m looking for a rice dish that’s moister and full of flavor, I cover the pan and cook it for about 10 minutes over medium-low heat.

After ten minutes, you'll notice that the chicken has released a lot of liquid, so now we're ready to add the rice along with the diced carrots and stir everything together well for about 5 minutes so the rice releases all its starch. Remember that we want "sticky" rice, as my daughter Miranda says—which, by the way, is just how she likes it 🫠

After 5 minutes, you'll notice that the rice starts to look "creamy". This is the time to add the liquid, which in my case was (hot) chicken broth made from bouillon cubes, and since I used 2½ cups of rice, I needed 5 cups of broth. I added a little more salt and pepper, covered the pot, and let it cook over low heat until it was done.

To finish, I added a little more cilantro, mixed it all together well, and it was ready to serve.

The result was exactly what I wanted: rice that was nice and moist, with a rich curry flavor, juicy chicken, and a beautiful yellow color. A quick and delicious dish for a Sunday at home.
