Cupcakes are a favorite at any gathering or celebration and that is due not only to their beautiful presentation but also to their great versatility.

Today I bring you some delicious banana and coconut cupcakes with mini chocolate covered cookies. A really delicious combination!

Today I wanted to share with you a delicious dessert that came up thanks to one of my little Miranda's inventions because as I told you a few days ago we had a fun sleepover at home and as any event, no matter how small it is, it must have something delicious to eat, my choice were some delicious banana and coconut cupcakes with mini chocolate covered cookies!

And I don't know about you, but for me, just the description of the cupcake makes my mouth water and that's because it has two of my favorite things; banana and coconut, which are two flavors that by the way combine quite well and with the addition of the mini cookies with chocolate they were not only delicious, but beautiful.

And the best thing about these cupcakes is how easy they are to make and although they have some additional ingredients compared to the traditional ones, it is well worth it because they are really delicious, plus for the kids it is an excellent addition to their lunch box because it contains fruit, carbohydrates, protein and sugar, an excellent combination to maintain energy during the school day.

These cupcakes have a particularity, because unlike others, the fat content is not provided by margarine but by oil, which together with the banana gives a lot of moisture to our cupcake.

And without further ado, let's go to the list of ingredients.

300grs of sugar
100ml oil
2 eggs
2 bananas
1 teaspoon of coconut essence
300grs leavening flour
Mini chocolate covered cookies

Few ingredients and quick preparation make this a really ideal recipe to prepare at home.

Beat at medium high speed the eggs, oil, sugar and coconut essence.

Mash the bananas very well with a fork. It is not necessary to process them, so this will be enough.

Lower the speed of the mixture and add the banana and incorporate very well.

Remove the mixture from the mixer and with the help of a paddle, fold in the previously sifted flour.

Fill the molds with a large spoonful of the mixture, and then add some mini chocolate cookies.

Add the rest of the mixture to the molds and finally add some more cookies.

Bake at 180° for approximately 20 minutes in a preheated oven or until golden brown.

As you can see the result is quite provocative and although at first I thought they would not be very fluffy because banana cakes usually are not, these cupcakes surprised me because besides rising beautifully they were quite fluffy and moist.

Not to mention the taste! The combination of banana and coconut for me is just perfect and the addition of the mini chocolate cookies was undoubtedly an incredible idea because they added not only texture, but flavor to the cupcakes.

It's a recipe you can't miss at home... few ingredients, super easy to prepare, beautiful and delicious, what more can you ask for? So there are no excuses not to try it.

Los cupcakes son los consentidos en cualquier reunión o celebración y eso se debe no sólo a su hermosa presentación sino a su gran versatilidad.

El día de hoy les traigo unos deliciosos cupcakes de banana y coco con mini galletas cubiertas con chocolate. Una combinación realmente deliciosa!!

Feliz día y feliz inicio de semana gente linda de #hivefood, espero hayan tenido un excelente fin de semana!

El día de hoy quise compartir con ustedes un delicioso postre que surgió gracias a uno de los inventos de mi pequeña Miranda pues como les comenté hace unos días tuvimos una divertida pijamada en casa y como cualquier evento, por muy pequeño que sea debe contar con algo rico para picar, mi elección fueron unos deliciosos cupcakes de banana y coco con mini galletas cubiertas de chocolate!

Y no sé a ustedes, pero a mí, la sola descripción del cupcake me hace agua la boca y eso es porque tiene dos de mis cosas favoritas; banana y coco, que son dos sabores que por cierto combinan bastante bien y con el agregado de las mini cookies con chocolate quedaron no sólo deliciosos, sino hermosos.

Y lo mejor de éstos cupcakes es lo fácil que son de hacer y aunque tiene algunos ingredientes adicionales comparados con los tradicionales, bien vale la pena porque en serio quedan deliciosos, además para los peques es una excelente adición a su lonchera pues contiene fruta, carbohidratos, proteína y azúcar, una excelente combinación para mantener la energía durante la jornada escolar.

Estos cupcakes tienen una particularidad, ya que a diferencia de otros, el contenido graso no es aportado por la margarina sino por aceite, lo que junto a la banana le otorgan mucha humedad a nuestro cupcake.

Y sin más demora vamos con la lista de ingredientes.

300grs de azúcar
100ml de aceite
2 huevos
2 bananas
1 cucharadita de esencia de coco
300grs de harina leudante
Mini galletas cubiertas de chocolate

Pocos ingredientes y una rápida preparación hacen de ésta una receta realmente ideal para preparar en casa.

Batir a velocidad media alta los huevos, el aceite, el azúcar y la esencia de coco.

Pisar las bananas muy bien con un tenedor. No es necesario procesarlas, así que con ésto será suficiente.

Bajar la velocidad a la mezcla y agregar la banana e incorporar muy bien.

Retirar la mezcla de la batidora y ayudados por una paleta incorporar de manera envolvente la harina previamente tamizada.

Rellenar los moldes con una cucharada grande de mezcla, y seguidamente incorporamos algunas mini cookies de chocolate.

Agregar el resto de la mezcla a los moldes y para finalizar agregar un poco más de galletas.

Hornear a 180° por aproximadamente 20 minutos en horno precalentado o hasta que estén dorados.

Como ven el resultado es bastante provocativo y aunque en un principio pensé que no estarían muy esponjosos pues las tortas de banana generalmente no lo son, éstos cupcakes me sorprendieron porque además de levantar de forma muy bonita quedaron bastante esponjosos además de húmedos.

Del sabor ni hablar! La combinación de banana y coco para mí es simplemente perfecta y la incorporación de las mini cookies de chocolate sin lugar a dudas fue una idea increíble ya que le aportaron no sólo textura, sino sabor a los cupcakes.

Es una receta que no pueden dejar de probar en casa... pocos ingredientes, súper fácil de preparar, preciosos y deliciosos, qué más pueden pedir? Así que no hay excusas para no intentarlo.
