Por aquí como les comenté temprano, tenemos fin de semana largo porque los chicos tenían libre este día, y decidimos iniciar con buen pie el fin de semana con una de mis comidas favoritas, una sustanciosa sopa de res, un plato perfecto para el fin de semana, ya que se cocina con calma y hay tiempo de sobra para disfrutarlo como se debe.
Hello, everyone!! I hope you’re having a great end to the week. As I mentioned earlier, we have a long weekend here because the kids had the day off, and we decided to kick off the weekend on the right foot with one of my favorite meals: a hearty beef soup—a perfect dish for the weekend, since it simmers slowly and there’s plenty of time to enjoy it the way it should be enjoyed.
En casa somos fans de las sopas, y la verdad me cuesta escoger alguna como favorita, pero sin lugar a dudas la sopa de res está en mi top 3, y aunque este es un plato bastante tradicional y generalmente se cocina de la misma manera, como ustedes saben últimamente estoy con la "fiebre" de cocinar con especias y mi sopita no se escapó de ellas y les cuento que el resultado fue increíble.
Además en cuanto a la carne, decidí usar una combinación que me encanta: costilla y lagarto con hueso, logrando el equilibrio ideal entre sustancia y carne blanda. Y ahora sin más quédense a ver el paso a paso!
At home, we’re big fans of soups, and honestly, it’s hard for me to pick a favorite, but beef soup is definitely in my top 3. And even though this is a pretty traditional dish that’s usually cooked the same way, as you know, I’ve been on a “spice craze” lately, and my soup was no exception—and I have to tell you, the result was incredible.
Also, as for the meat, I decided to use a combination I love: short ribs and bone-in brisket, achieving the perfect balance between heartiness and tenderness. And now, without further ado, stick around to see the step-by-step guide!

Procedimiento / Procedure
Para nuestra sopita de res fin de semana comenzamos cortando la costilla y el lagarto en porciones pequeñas y le agregamos nuestra mezcla de especias junto con la sal y la llevamos a cocinar en una olla con suficiente agua.
To make our weekend beef soup, we start by cutting the short ribs and brisket into small pieces, add our spice blend along with salt, and cook them in a pot with plenty of water.
Seguidamente agregamos todos nuestros vegetales cortados "groseramente", reservando un poco de cilantro y culantro, y cocinamos a fue lento hasta que la carne esté suave, al punto de comenzar a separarse del hueso.
Next, we add all our "coarsely" chopped vegetables, setting aside a little cilantro and culantro, and cook over low heat until the meat is tender, to the point where it begins to fall off the bone.
Una vez nuestra carne esté lo suficientemente suave, agregamos las verduras, y en este caso, en casa solemos comprar una mezcla de yuca, auyama y ocumo chino, y lo que hice fue agregar prácticamente todas las verduras cortadas en trozos pequeños, reservando solo un poco de auyama para el final, ya que la idea es dejarla hervir bastante hasta que la verdura comience a desintegrarse y esto es lo que hace que, junto con el gran sabor de la carne, nos quede un caldo bien sustancioso.
Once our meat is tender enough, we add the vegetables; in this case, at home we usually buy a mix of cassava, pumpkin, and Chinese taro, and what I did was add practically all the vegetables, cut into small pieces, setting aside just a little pumpkin for the end, since the idea is to let it boil for quite a while until the vegetables start to break down—and this is what, along with the meat’s rich flavor, gives us a very hearty broth.
Cuando la verdura está suave, es el momento de agregar la auyama que teníamos reservada, y el cilantro y culantro. Seguimos cocinando por 10 minutos más o hasta que la auyama se suavice.
Apagamos la cocina, dejamos reposar durante 5 minutos para que los sabores se asienten bien y servimos caliente, acompañada de un buen casabe.
When the vegetables are tender, it's time to add the pumpkin we set aside, along with the cilantro and culantro. Continue cooking for 10 more minutes or until the pumpkin is tender.
Turn off the heat, let it rest for 5 minutes so the flavors can meld, and serve hot, accompanied by some good casabe.
Como pueden ver, el tiempo prolongado de cocción logró su cometido, y tenemos un plato con un caldo bien sustancioso, sumamente provocativo y un sabor realmente increíble, sin duda alguna un excelente platillo para iniciar con buen pie el fin de semana!
