Las patitas de cerdo, era una de las comidas favoritas de mi papá, y él las preparaba de todas las formas que puedan imaginarse, pero con granos era la más común, sobre todo con caraotas y arvejas, y esta es la receta que les quiero compartir el día de hoy... Arvejas amarillas con patitas de cerdo.
Esta es una receta bastante sencilla, y un platillo bastante común en la cocina Venezolana, que suele ser preparado con cualquier tipo de granos, y que cada vez que lo preparo me hace recordar mi infancia y la deliciosa comida de mi papá, y por suerte, mis hijos son muy buen diente, así que cuando la preparamos en casa, todos quedamos felices.
Y para no seguir hablando mucho (ya saben que no me cuesta!), vamos con los ingredientes de nuestras Arvejas amarillas con patitas de cerdo.
INGREDIENTES
4 patitas de cerdo
400 grs de auyama (calabaza)
3 batatas
1 plátano maduro
1 ramita de cilantro
1 cebolla mediana
3 ajíes
4 dientes de ajo
1 ramita de cebollín
PROCEDIMIENTO
Cortar las patitas de cerdo y lavar muy bien.
Picar finamente la mitad de los vegetales.
Cocinar en una olla de presión por una hora aproximadamente las patitas de cerdo junto con agua, sal y los vegetales que cortamos previamente.
Mientras las patitas se ablandan en la olla de presión, en otra olla vamos a poner a ablandar nuestras arvejas amarillas, y mientras esto sucede, procedemos a cortar nuestras verduras. En mi caso, me gusta cortarlas en cubos pequeños para este tipo de preparaciones, y solo usamos las que les dejé en los ingredientes, pero esto depende del gusto de cada quien.
Transcurrido el tiempo que deben estar nuestras patitas en la olla de presión, las pasamos a la olla donde tenemos las arvejas, y si es necesario agregamos más agua. La cantidad va a depender de los comensales.
En mi caso, como somos 4 lo que suelo hacer es usar como medida el plato donde solemos servir las sopas y agrego 5, en lugar de 4 platos de agua, tomando en cuenta el proceso de evaporación para que no se seque demasiado.
Seguidamente, agregamos las verduras y el resto de los vegetales. Rectificamos la sal y dejamos cocinar hasta que las verduras estén blandas, y el caldo tome consistencia.
Particularmente no me gusta que queden demasiado cremosas, o sea, sí, pero no tipo engrudo, como me pasa a veces cuando me distraigo (risas). A mí me gusta que queden un poco cremosas, pero no súper espesas, así que tuve que estaer atenta para que no se me pasaran de ese punto, y por suerte me fue muy bien.
Quedaron realmente deliciosas y a todos en casa les encantaron y por supuesto quedamos con ganas de más, pero no es un platillo para todos los días, porque aunque es sencillo, su elaboración toma bastante tiempo. Pero sin dudas vale la pena.

1 ripe plantain

PROCEDURE
Cut the pork feet and wash very well.
Finely chop half of the vegetables.
Cook in a pressure cooker for about an hour the pork feet along with water, salt and the vegetables that we previously cut.
While the ducklings are softening in the pressure cooker, in another pot we are going to put our yellow peas to soften, and while this is happening, we proceed to chop our vegetables. In my case, I like to cut them in small cubes for this kind of preparations, and we only use the ones I left in the ingredients, but this depends on each person's taste.
After the time that should be our legs in the pressure cooker, we pass them to the pot where we have the peas, and if necessary add more water. The amount will depend on the number of guests.
In my case, as there are 4 of us, what I usually do is to use as a measure the plate where we usually serve the soups and I add 5, instead of 4 plates of water, taking into account the evaporation process so that it does not dry out too much.
Next, we add the greens and the rest of the vegetables. Add salt and cook until the vegetables are soft, and the broth takes consistency.
I don't particularly like them to be too creamy, that is, yes, but not like a paste, as sometimes happens to me when I get distracted (laughs). I like them to be a little creamy, but not super thick, so I had to be careful not to overdo it, and luckily I did very well.
They were really delicious and everyone at home loved them and of course we were left wanting more, but it is not a dish for every day, because although it is simple, its preparation takes quite some time. But it is definitely worth it.
