Hello foodies, how are you all doing? Everything’s fine here. Today was a pretty busy day, but very productive, and even though I’m a little tired, I wanted to stop by and share with you the recipe for the protein I served with yesterday’s rustic mini pumpkins. It’s Beer-and-Onion Roasted Chicken. A recipe that looks absolutely mouthwatering and tastes incredible.
I’ll tell you that I had some doubts about this dish, since, as I mentioned yesterday, I don’t usually cook squash for lunch—let alone the mini version I used—and I was a little worried about whether all the flavors would go well together, considering that the mini pumpkins have a slightly sweet taste. To put my mind at ease, I let the AI guide me and used a trick it recommended: seasoning the chicken with the same spices as the side dish—thyme and paprika—but adding onion and beer to create a different flavor profile. Luckily, it turned out great, since the chicken paired perfectly with the zucchini. So keep reading to learn how to make this delicious baked chicken with beer and onion.

Procedimiento / Procedure
The first thing we'll do to prepare today's recipe is to season the chicken by rubbing both sides with salt, black pepper, garlic, thyme, and paprika, which will not only add flavor but also give it a beautiful color.
The next thing I did was cut the onion into julienne strips and spread them out on the bottom of my baking dish, creating a sort of "bed". Then I arranged the chicken pieces right on top of the onions, skin-side up, and brushed them with a little oil.
Finally, I poured some of the beer down one side of the baking dish, making sure not to wet the chicken skin so as not to wash away the seasoning.
With our baking sheet ready, I placed the chicken in the oven, which I had preheated to 200°, and let it cook for 20 minutes. I removed it from the oven to baste the pieces with the sauce that had formed on the bottom, then returned it to the oven to cook for another 30 minutes.
Once it was ready, I took the baking sheet out of the oven and let the pieces rest for a couple of minutes before serving them alongside the rustic pumpkins.
The result? A really juicy chicken with an incredible flavor, thanks to the contrast of textures and flavors that worked wonderfully, making for a complete and super-delicious lunch.
