Hello foodies, I hope you’re having a great weekend. Today I want to share with you a new side dish to serve with your meals at home. We often fall into the routine of serving the same old sides with our meals, but today I want to show you how to transform a few vegetables into a completely different side dish with incredible flavor and presentation. It’s garlic-sautéed zucchini and carrot ribbons.
A light, nutrient-packed option with a delicious texture that also cooks super fast and is perfect for pairing with any main course without spending hours in the kitchen.
And I know that zucchini and carrots are very common vegetables, but the secret to this dish lies in how we cut the vegetables—and, of course, in the garlic, which is undoubtedly the star of this recipe.
Well, for our garlic-sautéed zucchini and carrot ribbons, instead of the typical slices or cubes, I decided to use a vegetable peeler to cut "thin ribbons", which completely transforms not only their appearance but also their flavor and texture! And when we sauté them with garlic until the vegetables are just tender, we preserve not only their vibrant colors but also their flavor and texture—which undoubtedly makes for a fantastic dish. So join me to see how they’re made.

Procedimiento/Procedure
To begin preparing our recipe, wash the zucchini and carrot thoroughly. Peel them, and using a vegetable peeler, cut both the carrot and the zucchini into thin, long strips. Also, finely chop the garlic cloves and fresh cilantro so that all the ingredients for our dish are ready.
Next, add two tablespoons of olive oil to a skillet and heat it thoroughly over medium heat. Once hot, add the garlic and let it cook for a few seconds until it begins to brown and release its incredible aroma—and, of course, be very careful not to let it burn.
At this point, add the carrot and zucchini strips to the skillet, season with salt and black pepper to taste, and begin to gently sauté so that all the flavors blend together. Since the strips are so thin, they’ll cook evenly very quickly.
Remember that the idea is to cook them just long enough to soften them slightly, so keep a close eye on them—this is the secret to our garlic-sautéed carrot and zucchini strips: they retain their color, flavor, and firm, crisp texture.
Let them sauté for about 3 or 4 minutes so the vegetables don't lose their shape, and just before turning off the heat, add a generous handful of finely chopped fresh cilantro and stir one last time to mix everything together well and let the cilantro infuse our dish with its incredible flavor.
Remove from the skillet and serve immediately. The result is a stunning side dish with a beautiful sheen, the perfect crunch, and a garlicky flavor that pairs well with any home-cooked meal!
