Chickpeas are a type of legume that offer a range of health benefits. Chickpeas help to increase satiety, boost digestion, keep blood sugar stable, increase protection against diseases and more. Chickpeas nutrition is a potent package of Protein,Vitamins and Minerals,which is why they are often included in many healing diets.
Ingredients:
Chickpeas - 1 - 1 1/4 c
Onion - 1
Tomato -1
Shallots - 3-4
Ginger - a small piece
Garlic -3-4 cloves
Coconut pieces(finely cut into squares) - 3 tbsp
Roasted chilly powder - 1 tsp
Roasted coriander powder -2 tsp
Turmeric powder -1/4 tsp
Black pepper powder - 1/2 tsp
Powdered spices - 1/2 tsp ( Aniseed,Cinnamon ,Cardamom)
Mustard seeds - 1/2 tsp
Cooking oil - 2-3 tbsp
Salt - to taste
Method:
1.Soak chickpeas overnight. Cook in a pressure cooker ,in the soaking water,until soft.
2 .Chop onions and cut tomatoes.
3.Chop one shallot finely and keep aside.
4.Grind ginger,garlic , remaining shallots, and all powdered ingredients together into a smooth paste.
5.Heat the oil in a frying pan, add mustard seeds ,allow it to burst,then add finely chopped shallot, allow it to become brown,
add coconut pieces and stir well 2-3 mins
6.Add chopped onions and saute it well.
7.Add the ground paste and salt into this and stir well until it gets slightly dry.
8.Then add cut tomatoes.
Chickpeas curry can be served with Bread, Rice or Chappathi( recipe in my next post) and a salad , as a meal.
