100h Soya meat
Oil (3 tbsp)
Curry leaves (5-6 leaves)
Onion (1 large, thinly sliced)
Green chillies (3, chopped)
Ginger (1 tbsp, minced)
Tomatoes (2 medium, cut into wedges)
Red chilli powder (1 tsp)
Roasted curry powder (1 tbsp)
Pepper (1/2 tsp)
Mustard (1/2 tsp)
Salt (to taste)
Boild two cups of water and add the soy meat to it.
Cover the pot with a lid and let the soy meat soak for five minutes, or until the chunks expand and become spongy.
Drain the excess water from the pot by placing it in a sink and tilting it to pour out the water, leaving only the soy chunks.
Rinse the soy chunks with cold water for a few seconds to remove residual heat.
Take a handful of soy chunks and squeeze out any remaining water.
Be cautious not to burn your hands with any remaining heat from the excess water. Set the squeezed soy chunks aside.
Heat a pan over low-medium heat and add oil, mustard , curry leaves, onion, garlic , green chillies, ginger, and tomatoes.

Cook until the onions and other ingredients turn translucent.
Add the red chilli powder, pepper, roasted curry powder Mix well and cook for 3 minutes.
And then add the soya meat at last and add half a cup water.
Add the soya meat to the tomato sauce if you want and mix well. (Here I didn't use tomato sauce )
Taste and adjust seasoning if needed.
Cook until the sauce coats the meat with a little gravy.
