How are you all? I hope you are all doing well. I am also doing perfectly fine. Today, I want to share one of my favorite recipes with you all. This is a very simple and delicious dish that everyone in my family loves, especially my children.
This recipe is called Namkeen Rosh. It is a very simple meat dish because it does not need tomatoes, gravy, or many spices. It is mainly made with meat, onions, garlic, black pepper, salt, and a little oil. Even though the ingredients are very simple, the final taste is absolutely delicious.
In our family, we often try to cook something special on Fridays because the children come home early from school. So, having something delicious already prepared makes them very happy. Friday is also considered a special day, almost like Eid in our Muslim tradition, so we like to make something nice for the family. Since everyone at home loves Namkeen Rosh, we decided to make it for our Friday meal.
Ingredients
For this recipe, I used around 2 kg mutton. First, wash the meat very well and leave it aside so all the extra water can drain
You will need:
2 kg mutton
A little cooking oil
1 large onion
5–6 cloves of garlic
A small piece of ginger
Whole black pepper
Salt, according to taste
1 to 1½ glasses of water
Start Cooking the Mutton
First, heat a pressure cooker and add a little oil. Do not add too much oil because mutton has its own fat, and it will release oil while cooking.
Now add the washed mutton to the cooker. Give it a gentle stir once or twice with a spoon. At this stage, we do not need to fry the meat too much.
Now take one large onion and cut it into thick pieces. Do not chop it finely because the meat will cook for a long time and the onion will become very soft on its own.Add the onion to the meat along with the garlic and a small piece of ginger.
Add Black Pepper and Salt
Now add some whole black pepper. I prefer using whole black pepper for this recipe because it gives the meat a wonderful taste without making the dish complicated.The most important ingredient in Namkeen Rosh is, of course, the salt. The salty taste is what makes this dish so special. I used around 2 teaspoons of salt, but you can adjust it according to your taste.Now add about 1 to 1½ glasses of water.
Pressure Cook
Close the pressure cooker properly and let the meat cook for about one hour.After one hour, carefully release the pressure and open the cooker. You will see that the mutton has become very soft and tender. The onions will also be beautifully cooked and almost disappear into the gravy.
At this point, your delicious Namkeen Rosh is ready to dish out.
How We Serve It
We usually enjoy Namkeen Rosh with a simple fresh green salad. We like to serve it with lettuce, green onions, and fresh radish leaves. These fresh vegetables go so well with the rich and flavorful meat, and they make the whole meal even more enjoyable.
A few days ago, I also shared the recipe for a Persian dish called Tahdig with you. We served this Namkeen Rosh with that rice as well. Rice is usually enjoyed with something on the side, so Namkeen Rosh was a perfect combination with the Tahdig.
I shared the Tahdig recipe separately because its preparation is quite different and takes some time, so I thought it would be better to explain both recipes in separate posts.
Final Thoughts
I really love recipes like this because they are simple, comforting, and full of flavor. You do not need a long list of spices or a complicated cooking process to make a delicious meal. With just a few simple ingredients and some patience, you can prepare a wonderful family meal.
