Personally for me, this is one of the best fish recipe I've created in my restaurant couple of years back and it is still so famous on our menu offerings...
I still remember that day when my brother in law gave me some nice fish fillets...and I immediately took one filet and went straight to the kitchen to try it out and this recipe came to my head...
Fast forward 3 years later and our guests still order it when they visit us...
Making this dish is quite easy...let me show you briefly how we normally do it in my restaurant!
You can try it too by bringing in some personal touch with the spices and you can add vegetables too...just be creative!
We make a marinade with olive oil, fresh chopped ginger, garlic and turmeric, little honey, fresh lime and spring onion!
Season with some salt and pepper!
Cover the fish fillet with this aromatic marinade and let to marinate for 15 minutes like that in the fridge!
After 15 minutes, take it off the fridge and let come to room temperature...then we place it on the grill just on one side for it to get that lovely smoky flavor...
Next we transfer the fillet delicately on a piece of aluminum foil folded like a small boat...we do this so that we capture all the cooking juice of the fish!
Add some onion rings, coriander leaves, lime slices and spring onion on top of the fillet and put it on back on the same grill fire!
For the top part of the fish to cook, we cover it for 3 minutes with another piece of aluminum foil!
The cooking will be very quick...
It takes about 6-7 minutes to cook...well this depends on the thickness of your fillets!
Just before degustation, some freshly squeezed lime juice and virgin olive oil are added and fresh pepper corns...
Instead of the foil, you can use a baking dish and cook it in the oven if you don't have a grill...
The most important part of this dish is the marinade and the cooking timing of the fillets...Once you master these, your fish will be just super delicious!
