Wishing a wonderful day to all my dear friends! How is everyone doing? I hope you are all doing well. Time seems to be flying by so quickly without us even realizing it. So, for breakfast today, I made roti with seeni sambol (caramelized onion relish). It's incredibly tasty and just as flavorful as the roti you find in the market. However, the special thing about this recipe is that it’s made at home, making it a healthier option.

Whether you have an oven or not, this is something you can easily make without any trouble. Roti is a dish we are all familiar with, but what makes this version unique is the addition of seeni sambol in the middle. For those unfamiliar, seeni sambol is a sweet and spicy onion relish made by caramelizing onions with spices. Let's move ahead and see how to prepare this delicious recipe!

Materials Used.

Wheat flour 200g.
Water 100ml.
1 1/4 tea spoon of Yeast.
3 Tablespoon of sugar.
4 Tablespoon of coconut oil.
Salt as needed.
2 Teaspoon of crushed chili powder.
About two onions, finely chopped.
Curry leaves.
3 crushed cloves.
A piece of cinnamon.

The cooking process as follows.

Now let’s get ready to prepare this delicious roti. First, take a bowl and add 1 tablespoon of sugar, 1 1/4 teaspoons of yeast, and a little water. Mix everything together thoroughly. Let it sit for about 5 minutes.

Now, we add some wheat flour to the yeast mixture. Then, add 1/2 teaspoon of salt and 1 tablespoon of coconut oil. Mix everything well until it is thoroughly combined.
Now, knead the mixture into a dough and coat it evenly with coconut oil. Let it rest for about an hour.

Next, let's prepare the onion-based sugar sambol mixture to use as the filling for the roti. For this, place a pan on the stove and add 2 tablespoons of coconut oil. Once the oil heats up, add a few curry leaves and sauté them briefly. Then, add onions, cinnamon sticks, and crushed cardamom seeds, and mix everything well.

Next, add chili powder, 2 tablespoons of sugar, and salt to taste, and continue to mix well while cooking. Once the onions have released their moisture and the mixture has reduced, add a little tamarind juice and mix thoroughly. Cook it for a few more minutes, then remove it from the heat.

After that, take the dough that has been resting for about an hour and place it on a floured surface. Cut the dough into four equal portions.

Next, take each of the four dough portions and, using a rolling pin, roll them out thinly.

Next, place a spoonful of the prepared onion mixture with sugar sambol on the rolled-out roti. Then, fold the roti as shown in the images below.

Next, we need to cook the prepared roti on a heated pan or plate. Follow the steps below to complete this process.
