Chicken Menasinakai loves Chicken Kotambari

Every Chicken curry in India is a special dish. And every other cooking chicken is a chef 😉 as he invents his own (by Mistakes)

Inspired by steemflow@steemflow cooking posts(meat) I want to post my experience with chicken in lockdown Bengaluru

Today I will be writing about how I ended up with two chicken recipies on single post.


The Base

All you need to create a good base for the chicken curry are as below

  • cooking oil
  • chopped onions
  • spices (if preffered)
  • salt
  • ginger garlic paste

Prepare the chicken pieces by cutting them into medium pieces of your choice.

Note: Indians always prefer the chicken with those soft bones which are in the whole chicken

Once the chicken pieces are ready, start with heating oil in a big pan or a vessel which can hold twice the size of chicken meat you are cooking.

  • add oil and preheat the cooking oil
  • add spices like cinnamon

  • prepare the onions by chopping them into small pieces.

Onions swimming in preheated oil. Allow them to swim for few min till the onions turn red.

After the onions turn red, add the ginger garlic paste. And let the paste fry for few minutes

Some prefer the home made ginger garlic paste, which is always good. If u r a lazy bachelor then you got to use the ready made one which u get at grocery stores.

I call it a base.
Once the Base is created, add chicken pieces and keep turning till the base gets mixed up with chicken pieces.

  • add salt
  • add curry leaves

Close the lid and allow the chicken to get cooked for few min.

Now the base with onions, ginger garlic paste is well mixed with chicken, Separate few pieces of soft chicken to another container.

That's is what becomes Chicken Kotambari

Prepare the Spicy Masala

All you have is a chicken cooked in salt oil n onions

What do you need

  • mint leaves (optional)
  • red Chillies
  • Some garlic
  • Onions and tomatoes
  • Spices mixed powder

Grind all the mixture into a paste or a beaten chops in the grinder. I have made it half grinded to prepare more gravy. Else a soft paste will also do a great job.

Now you have the spicy paste of chilli dominance.
Add the paste into the checked container

Cook the same again for 10 minutes. The chicken will be well immersed and obsorb all the spicy juice.

After q0 min of cooking, the curry would look as below

Add some cilantro and check the taste of chicken menasinakai


Chicken Kotambari

From the base chicken, the separated cooked chicken pieces will be fried for longer on a pan

Once the chicken is fried brown, add cilantro (Kotambari) and close the lid for few min. Cook in low flame

And the Kotambari(Cilantro) flavors drop into chicken

The taste was great. Over fried less spicy chicken Kotambari and well cooked juicy spicy chicken Menasinakai 👌👌
