It's been years, YEARS!! since I've cooked something new, from a recipe... I had a hankering for choc chip cookies.... don't judge me ;-), it's winter in Australia. A warm choc chip cookie with a nice hot cup of cookie was extra indulgent on this cold Sunday morning!
So I knew we had this recipe for choc chip cookies that we saw on Hugh's River Cottage show some years back. I thought I'd give it a go. Here's the recipe, and the result. I'm pretty happy with them.
Hugh Fearnley-Whittingstall’s Proper Choc Chip Cookies
Ingredients
350g Castor Sugar
350g Brown Sugar
500g Butter
4 Eggs
4 Tbs Vanilla Essence
600g Plain Flour
Chocolate Chips to taste
Method
Melt the butter over a low temperature
Add in castor & brown sugar and mix until the butter is folded in
Add the eggs and vanilla essence and mix until an even consistency
Add the flour and mix thoroughly until a well mixed dough
Add choc chips and mix until even.
Put into a preheated oven at 190°C for 10 minutes
BEWARE!! This is a half batch of Cookies after we have had some!
But if I can make them, anyone can!
