We all have days where we get home and our nice healthy meal we have planned just honestly looks like a lot of work and we just want to get in our PJ's ASAP. This is what I eat on those day.
Gardein Meatless Pepperoni Pizza Pockets
These are SO good! I like them better than frozen vegan pizzas. They are jammed packed with meatless pepperoni, vegan cheese, pizza sauce and red pepper. The red pepper really adds a nice flavor to it.
Salad with Hampton Creek Just Ranch
I'm originally from the Midwest and in the Midwest everything is topped with ranch. Just Ranch is the best vegan ranch I have found yet! I did not like Daiya's version. It is creamy and tastes like the real deal!
Something about pizza and a salad with ranch dressing is comforting for me. I think it is because it was my favorite cafeteria lunch in elementary school. It is not the healthiest lunch but it is nice to have as an occasional treat :)
