I’ve actually tried caramel pudding before, but that version wasn’t vegan because it was made with dairy. This time, though, I’m going to make a special caramel pudding using plant-based ingredients that’s even more delicious—and you’ll definitely want to enjoy it after your main course. It’s going to be a special dessert you won’t want to miss. As a lover of pudding and sweet treats, I really enjoy transforming plant-based ingredients into something this delicious. My advice: use fresh soy milk for a more delicious and, of course, fresher result.
Caramel pudding is indeed a favorite for many people; it’s usually made with animal milk and eggs. In my opinion, for those who don’t care for a strong egg aroma, adding eggs can actually detract from the dish’s enjoyment. Especially for vegans, I think this is the perfect idea for making a much healthier caramel pudding at home.
400 ml soy milk
1 packet of jelly powder
4 tablespoons granulated sugar
Peanuts, as needed, for garnish
Step 1
Make caramel with 2 tablespoons of granulated sugar. Once the sugar has melted, add 2 tablespoons of water and cook until the caramel thickens.
Step 2
Pour the caramel into your desired mold. Let it set for a moment, then prepare the ingredients for the jelly.
Step 3
Add soy milk to a saucepan, mix in the jelly powder, and stir.
Step 4
Add granulated sugar, then cook until fully set.
Step 5
Pour the mixture into the mold lined with caramel and let it set until the pudding is cool.
Serve the caramel pudding after chilling it in the refrigerator—it will taste much fresher. Remove it from the mold and sprinkle with roasted peanuts. Look at the result—it’s absolutely beautiful! My caramel pudding is much prettier than the ones I usually make with animal-based products. It turns out that soy milk makes it richer in texture and softer.
The sweetness is just right, and when mixed with the caramel, the pudding’s flavor really shines through—it’s perfect as a delicious dessert for your family.
