Crispy vegan snacks made from coconut, you must be rare to find, right? But what if these snacks become something delicious to enjoy with your family at home.
Starting from a new discovery about coconut during Eid yesterday, my sisters bought this coconut cake at the market at that time. However, I saw something strange about this cake, the taste was bland and the color was colorful. I don't like cakes that are too colorful like the ones my sisters bought. After looking on the internet, I found traces of the cake. It turns out that the cake is made of non-vegan ingredients, with a combination of coconut as the main ingredient in it.
The non-vegan composition will indeed be easy to imitate, but changing it to a vegan snack requires a separate way to keep the texture of the cake under control. They do use non-vegan ingredients in it, but this time I'm going to change it to a vegan version. So that it will be very easy for those of you who want to enjoy vegan snacks to imitate. When I came across this vegan recipe what a surprise, I only needed a few simple ingredients to make it. And my main belief is that they will be crunchy not hard and won't even fall apart without those non vegan ingredients.
This is my first time trying it, this cake is very simple, anyways I can easily find coconut here!. Well they are abundant even other materials are very cheap in the market. So, instead of being curious, let's watch me start preparing this recipe!
100 grams of grated coconut
200 grams of wheat flour
3 tablespoons of butter
4 tablespoons granulated sugar
1 teaspoon of salt
A pinch of vanilla powder
Step 1
Prepare a half-old coconut and then bake it for a while until the water runs out or is dry. So, I baked for about 10 minutes.
Step 2
Add the butter, then add the sugar, stir until everything is evenly mixed.
Step 3
Add salt, then add flour, stir until evenly distributed.
Step 4
Add grated coconut little by little while kneading.
Step 5
Knead until smooth, and can be shaped, take a tablespoon of the dough and put it in the pan.
Step 6
Press with a fork, as thin as possible, so that later the cookies are crunchy and delicious.
Step 7
Oven with a temperature of 180 degrees Celsius for 35 minutes with fire up and down. Check with scale until the cake turns golden brown.
Coconut cookies are ready to be enjoyed, serve as a healthy vegan snack without preservatives for your family at home. So for those of you who don't like sweet, you can not add sugar in it. The taste is still delicious and tempting, the combination of grated coconut with flour and margarine is really tempting.
The best smell of this cake, is when I bake it, it smells good and that makes me really like it. Don't ask again about the taste, it's very tasty, sweet and savory and of course when I bite into it they are very crunchy. Just like enjoying fried snacks, that's the taste. This snack can be stored for months if you store it in an airtight container such as a jar. I did make this for myself as a snack because I really like cake made with coconut.
Now for those of you who love snacking while relaxing with your family, this is the right crunchy snack. I guarantee the kids will really like it. Even when I shared it for my friends, they loved it so much they even wanted me to recreate it.
