Dense and soft bread is my dream when it comes to making bread that works at home, but it was beyond my expectations. One of them is this pumpkin bread, made by accident because I had some leftover pumpkin from yesterday.
Isn't making bread a lot of fun?, it's real for me, the longer I make bread the more I know where I went wrong. Yesterday I managed to make a very soft bread. Somehow trying different types of bread is a must for me now. Especially by utilizing the pumpkin left at home, I became very enthusiastic to try this bread
Pumpkin bread is bread made from processed pumpkin which is steamed then finely mashed and stirred in the bread dough. This bread can actually be made plain or stuffed according to taste. Now because I have a lot of coconut unti filling, I added the filling. Coconut-stuffed bread is a favorite in my house, and you can find the recipe for the coconut filling in my previous bread recipe.
This bread is different from the previous recipes that I have made. Pumpkin bread has a softer and fuller texture, and the bread when cooked is denser and heavier than other types of bread. So it will quickly make anyone who enjoys it doubly full.
Now that you're curious about the recipe, let's take a look at the step-by-step preparation.
250 grams of wheat flour
50 grams cornstarch
30 grams of milk powder
1 egg
100 grams steamed pumpkin
2 tablespoons sugar
1 tablespoon fermipan
120 ml warm water
2 tablespoons butter
½ teaspoon salt
To taste coconut filling (optional)
Step 1
Prepare the bread maker first as usual sugar is dissolved in warm water, then add fermipan stir until evenly distributed and let stand until the yeast is active and expands twofold.
Step 2
While waiting for active yeast, mix dry ingredients such as flour, cornstarch, and also milk powder.
Step 3
Next puree the pumpkin, until it is really smooth, here I was helped by 2 nephews, I let them puree the pumpkin.
Step 4
Mix the pumpkin into the dry mixture that has been prepared earlier, stir until well mixed.
Step 5
After the yeast is active, stir then add 1 egg and stir until well mixed, then slowly add it to the dry dough.
Step 6
While the dough is kneaded, then add salt and butter stir again until well mixed.
Step 7
The dough is a bit sticky, then let it rest for about 20 minutes then let it double in size by covering it with a napkin.
Step 8
If it has risen deflate it then divide the dough into nine parts, then put the coconut filling and cover the dough.
Step 9
Put in a baking sheet, then rest the dough again for about 1 hour by covering again.
Step 10
After resting the dough has doubled in size then brush with butter and sprinkle sugar on top.Bake at 200 degrees Celsius using top and bottom heat for about 30 minutes.
Pumpkin bread has been cooked which means it is ready to be enjoyed, wow I am very happy with the natural bright yellow color of the pumpkin. This is so beyond my expectations, the color is very tempting indeed. Moreover, the texture is very soft not hard at all, as I said above the bread is heavy and very full I like this texture.
