Don't sweet dishes always make you curious? Of course, this sweet dish with pancakes makes an amazing first impression. When I tried this unusual recipe, I really liked it. Corn is my favorite, but when combined with coconut, it becomes even more interesting to try.




Baked Corn Cakes


Baked corn cakes are sweet snacks made from corn mixed with grated coconut. Both have a very authentic taste with a spectacular flavor, in my opinion.

The sweet and savory flavors combine to create a soft cake, giving it a special touch and making it perfect for serving at various events.

This recipe yields a decent amount of cakes in standard size; I use about 2 tablespoons of batter per cake. To ensure even and quick cooking, I found this recipe on social media a few days ago. It was a lucky coincidence that I had corn at home. I made it right away, and here are the steps below.




Ingredients

200 grams of glutinous rice flour
100 grams of corn
150 grams of grated coconut
80 ml of coconut milk
5 tablespoons of granulated sugar
1 teaspoon of salt




Procedure


Blend the corn with a little water, or you can blend it directly with the coconut milk.

Then add the grated coconut and coconut milk to the bowl.

Next, add the salt and granulated sugar.

Finally, add the flour and stir until smooth and thick. Don't forget to add cooking oil or melted margarine at the end.

Then bake on a Teflon pan until golden brown, using low heat to ensure even cooking.When flipping the cake, do so gently so that it does not break.

Serving Suggestions

Serve warm or at room temperature—both are equally delicious. Top with chocolate and colorful sprinkles for a beautiful presentation. The combination is superb, in my opinion. The aroma of corn and coconut when roasted fills the house, making everyone here feel hungry. The combination is perfect in my opinion—the savory-sweet flavor is just right on the tongue.

What I like most is the incredibly soft texture of the outer layer, which is a beautiful golden-brown color. I absolutely love the way it melts in your mouth—I never would have guessed that corn could be turned into such a delicious dish.
