Hello to all blog colleagues, here I am with another simple and healthy recipe, it's still hot here and I don't want to eat too heavy things so tonight for dinner I opted for a simple and tasty recipe, using one of my favorite vegetables, the courgettes, I love courgettes in every way and shape, stuffed, boiled, pan-fried, fried, in every way.
For this recipe you will need:
- 2 large light courgettes
- 3 tablespoons of olive oil
- 1 tablespoon of saffron
- 1 teaspoon lemongrass
- 2 tablespoons of fine salt
First we take the courgettes, wash them well and cut them into thin slices, prepare a pan with tablespoons of oil and cook for a minute. When the oil is hot we add the courgettes and mix, let them cook for about three minutes and then salt them and mix again, after which we prepare the spoons with the spices, saffron has a very particular and rich flavour, unfortunately it is quite expensive so usually I use it sparingly but not today, it has a slightly bitter taste as well as the lemongrass which makes this dish tasty but with a bitter aftertaste, we add the saffron and then mix the lemongrass and mix again. We cover the pan with a lid and let it cook on a slow flame for twenty minutes, then our delicious dish will be ready, light, tasty and with simple ingredients. A simple but effective dish, excellent both as a meal and as a side dish.
