Hello foodies!


Are you in for a salad? I promise it's delicious!

We use to have salads very often and this time I present you this one which is very easy to make and have lots of good stuff in there for your health too! 🥗


SALMON SALAD with a fresh ORANGE JUICE &
DIJON MUSTARD DRESSING

INGREDIENTS:


For the salad 🥗

  • a combo of greens
    I used rocket salad (arugula), chard, beet leaves, lettuce, lollo rosa salad, Mizuna lettuce, Tatsoi green leaves.
  • crutouns
  • salmon
  • some olive oil (for frying the salmon)

Besides the dressing, this is everything I wanted to put in my salad, but you can add some cherry tomatoes, cucumber or olives as well.

For the dressing

  • 1/3 cup orange juice
  • 1/4 cup olive oil
  • 1 Tbsp Dijon mustard
  • 1 Tbsp Honey
  • Apple cider vinegar (according to your taste) but around 1-2 Tbsp
  • Salt & Pepper

After squezzing the oranges ( I used one lime too because I like them a lot but this is optional), put everything in a jar, put the lid on and shake it like crazy!

As for INSTRUCTIONS, there aren't many.

Do the dressing like I mentioned above, putting all dressing ingredients in a jar and shake it until all is well combined. And you'll have your dressing.

Then, put the olive oil in a pan and start frying the salmon. You can oven bake it as well, but I think you need that crunchiness and frying taste to have a delicious salad with all those greens.

Wash the greens, drain them from the excess water and mix it up with the dressing.

Put the salad on a plate, add on top crutouns and then the salmon fish. 🥗

SO what do you think? You don't need more than 30 minutes to finish the salad. You can even make the dressing hours before and keep it in the fridge until you need it. 🥗

My salmon doesn't really looks nice but it was delicious!
