Continuing on from yesterdays post I thought I'd go for something a little more indulgent today, I was feeling the need for some Starch so i cooked up this:
First things first. Check you gnocchi if you are buying store bought gnocchi. Some of them might have egg in them. Generally they don't but do check first. For this recipe you are going to need:
Serves 2-3
Start by Peeling the skin off the muchrooms, then dice or slice them as little or as big as you prefer. season with salt and pepper and put in a baking tray, drop in a small knob of butter/margarine and stick these into the oven at about 180 Degrees C/ 350 degrees F for 10 - 15 minutes or until nicely browned.
Meanwhile Get a decent non stick frying pan, put it on a medium - high heat and when it starts to get hot drop in a knob of butter or margarine. Make sure the pan is hot and then add your gnocchi. Keep the gnocchi moving in the pan all the time, you have to watch these like a hawk so they don't stick. Keep them moving and watch that the they don't start to burn. It will take a good 10 minutes or so of constantly keeping these moving, using a spoon to turn the over from time to time, add some more margarine if you feel the pan is getting too dry and they will start to go a nice golden colour. If you pick one up you should feel a sort of crunchy crust start to form on them. Taste one to make sure it is cooked through and then put to one side.
In a separate pan fry the onions and garlic until they soften, toss in the kale and allow it to cook down, finally add the mushrooms and a few spoons of the oat creme fraiche, season with salt and a good hit of black pepper. Let this mix gently warm in the pan. Mix the Gnocchi gently through this mix and serve. I finished it with another dollop of oat creme fraiche and some shredded raw kale for a bit of crunch.
Thank you, as always for your support and upvotes.
See you tomorrow!
