Preparamos un pastel de Zucchini y arroz / We made a zucchini and rice cake
Por si no lo sabían, hubo un tiempo en el que fui vegetariana por aburrirme del sabor de la carne y el pollo (o las maneras en las que mi mamá lo cocinaba), así que aprendí muchas recetas con vegetales que son realmente deliciosas. Justo hoy quise hacer una de ellas, por lo que compré todo lo necesario y cocinarla para el almuerzo.
Este pastel de zucchini o calabacín, es ideal para comerlo solo o usarlo como guarnición, y aunque parezca muy simple, con una pequeña ración quedas completamente satisfecho. Ahora, como dice la amiga @kristal24 pongámonos el delantal y empecemos a cocinar.
Ingredientes:
2 zucchini
100 grs de mantequilla
1 ajoporro o apio (se puede usar también cebollín o verdeo al gusto)
2 cdas de harina de trigo
1 taza de arroz ya cocinado.
1 huevo (opcional)
Sal y pimienta al gusto
Preparación:
Esta receta se hace con el arroz ya preparado, y puede ser inclusive del que queda del día anterior. Si no tienes, la recomendación es montar a hacer el arroz mientras procedes con los demás ingredientes, así estará todo listo al momento de integrarse.
Cortar el ajoporro finamente y reservar. Luego, lavar bien los zucchinis y rallar por el lado grueso, sin retirar la piel.
En una sartén, colocar la mantequilla a derretir y luego saltear primero el ajoporro (pueden usar cebollín, cebolla o las 3 cosas juntas) y después incorporar el zucchini rallado, remover y bajar el fuego.
Cuando el zucchini se haya reducido un poco, incorporar el arroz, removiendo para que todo se integre. Si la mezcla queda muy líquida, agregar una o dos cucharadas de harina de trigo para que se compacten los ingredientes.
Originalmente, el plato no lleva huevo, pero si lo vas a comer solo, recomiendo agregarle un huevo, para que tenga algo de proteína, pero si lo usas como acompañante (guarnición) no es necesario.
Finalmente agregar un poco de queso rallado y listo para pasar a un envase previamente enharinado o con papel para cocinar. Colocarlo todo en el envase, agregar más queso rallado por encima y llevar al horno por 10 minutos o hasta que el queso se vea dorado.
Lo que me gusta de este plato, además de que incorpora vegetales y proteína en una sola receta, es que se puede comer tanto recién sacado del horno como frío, puede ser el plato principal, o acompañarlo con carne, pollo o pescado.
Ya solo queda emplatar y degustar.
Las medidas sugeridas es para una sola persona, si deseas hacerlo en mayor cantidad, solo hay que duplicar la cantidad de zucchinis, arroz y huevos.

1 leek or celery stalk (you can also use scallions or green onions to taste)
2 tablespoons of wheat flour
1 cup of cooked rice
1 egg (optional)
Salt and pepper to taste
Preparation:
This recipe uses pre-cooked rice—you can even use leftovers from the day before. If you don’t have any, I recommend cooking the rice while you prepare the other ingredients, so everything will be ready when it’s time to combine them.
Finely chop the leek and set aside. Next, wash the zucchini thoroughly and grate them using the coarse side of the grater, leaving the skin on.
In a skillet, melt the butter, then sauté the leek first (you can use scallions, onions, or all three together), and then add the grated zucchini, stir, and lower the heat.
Once the zucchini has cooked down a bit, stir in the rice, mixing well to combine everything. If the mixture is too runny, add one or two tablespoons of wheat flour to thicken it.
The original recipe doesn’t call for an egg, but if you’re eating it on its own, I recommend adding one for some protein; however, if you’re using it as a side dish, it’s not necessary.
Finally, add a little grated cheese, and it’s ready to transfer to a baking dish that’s been dusted with flour or lined with parchment paper. Place everything in the dish, sprinkle more grated cheese on top, and bake for 10 minutes or until the cheese is golden brown.
What I like about this dish—besides the fact that it combines vegetables and protein in a single recipe—is that it can be eaten either fresh out of the oven or cold. It can serve as a main course or be served alongside meat, chicken, or fish.
Now all that’s left is to plate it and enjoy.
The suggested measurements are for one person; if you want to make a larger batch, simply double the amount of zucchini, rice, and eggs.
