Egg Drop Soup or Egg Flower Soup is originally from China, here in America we can find in almost every Chinese cuisine restaurant, especially at a Buffet restaurant. Egg drop soup is very easy to make, basically just a beaten egg that's added into a boiling broth, can be chicken or beef broth.
At a young age I was working at a Cafeteria in Malaysia that served many different kinds of ready to eat foods, one of them was some fish cake dish in egg drop soup. That's why I am expert on making it.
Here's how to make it, get ready with chopped garlic, chopped ginger if you prefer, but it will give the tangy bite into it and also to reduce the fishy smell of egg if you don't like.
I added some shiitake mushrooms (cut), fresh corn and spinach, salt, white pepper powder, beef bone broth (mine homemade), 1 beaten large egg (for every 1 litter of broth or you can add 2 but your soup won't look flowery beautiful if it too crowded) and 1 tbsp of cornstarch stir in 1/2 cup of water to thicken the soup.
In a pot, reboil your beef broth, along with fresh corn and mushroom, salt, white pepper powder. And in a frying pan, sauté the garlic and ginger until it's fragrance then add it into the beef broth.
This is the fun part, When it's boiling, turn the heat down and add the beaten egg a little bit at the time.
Remember to always stir the soup every time you adding the stream of beaten egg, that way you will create a beautiful thin flaky and flowery egg.
when you are finished with the egg, quickly add the mixture of cornstarch and keep stirring.
Please note, adding too much cornstarch to the soup will thicken the soup so the flowery eggs will stay float. So stop adding the cornstarch mixture if you think the soup is thick enough.
And finally add the spinach at the end, then turn off the heat.
I know it may feel a little nervous and uncertain because you might not make it nice and flowery egg when you get into the fun part, but enjoying the soup with your family is more pleasant because you add a new dish into the family's menu.
Isn't that simple, with only some basic ingredients you can make it outstanding, gourmet, and super classy.
