Hey y'all! It's getting mighty chilly here in London town, and when the weather gets like this comfort food is top priority in my book! I really wanted to bake something and it occurred to me that I hadn't made banana bread in like forever!🍌
I wanted to make it a little differently and a little more indulgent so decided to add chocolate to the mix- never a bad thing 😁
Ingredients:
¼ cup oat milk
1 tsp apple cider vinegar
1½ cups very overripe bananas, mashed (3 medium bananas)
½ cup organic cane sugar (or ⅓ cup maple syrup)
¼ cup melted coconut oil
1 tsp vanilla extract
2 cups whole wheat flour
1 tsp baking soda
½ tsp sea salt
½ tsp cinnamon
½ cup chocolate chips, plus more for topping
Method:
Preheat oven to 175c.
Place the oat milk and apple cider vinegar in a small bowl. Stir and put to one side.
In a large mixing bowl, mash the bananas well with a potato masher or fork.
Add sugar or syrup, oil, and vanilla, stirring to combine. Stir in the oat milk.
Add flour, baking soda, salt, chocolate chips and cinnamon. Combine but be careful not to over mix- you don't want it to be too smooth.
Pour into a greased loaf pan.
Bake for an 1 hour and 10 minutes or until a knife comes out clean.
Once done, carefully remove from the tin, top with more chocolate chips and leave to cool.

Ooh this turned out so well! So yummy and the chocolate chips went all gooey which added an extra yum factor! It takes quite a while to cook, but the preparation time is pretty minimal and it'll make your house smell delicious while it's baking!
