From 0 to Chef: Diary of a Kitchen Beginner — Pork Steaks with Sour Orange Marinade
Hello, friends of Foodies Bee Hive!
After some time away, I'm back with a new chapter of From 0 to Chef: Diary of a Kitchen Beginner, this little series where I've set out to learn how to cook, experiment with recipes I can make at home, and share both the results and the adventures that come along the way. As you already know, I'm not exactly an expert in the kitchen, so here we're learning as we go, using the resources we have available and, above all, wanting to enjoy some good food.
For my return, I'm bringing you a fairly simple recipe, but one that holds a special place among my favorite ways to eat pork: small pork steaks marinated with sour orange, served with white rice.
The truth is that I was craving some meat, and while I was cutting the pork loin into small steaks, or bistecitos, as we call them in Cuba, they turned out so small and pretty that I honestly thought they were adorable. I couldn't help wanting to cook them right away! So I took advantage of the inspiration and got to work.
Ingredients
To prepare this recipe, I used:
Pork loin.
Garlic.
Salt.
Onion powder.
Sour orange extract.
Lard for cooking.
The quantities depend on how much meat you're preparing and your personal taste. In my case, I used enough to season the small steaks and give them the flavor I enjoy so much.
By the way, there are two little details I have to confess. The onion I had at home was powdered because I couldn't find fresh onion, and something similar happened with the sour orange: I only had the extract available. So I had to make do with what I had. A future chef must also learn to improvise!
Step-by-Step Preparation
Prepare the marinade
First, I crushed the garlic together with the salt until they formed a well-combined mixture. Then I added the onion powder and sour orange extract, mixing everything together to make the marinade for the meat.Let the meat marinate
I added the marinade to the pork steaks, making sure they were well coated on both sides. Then I left them to rest for at least one hour so they could absorb the flavors.Sear the pork steaks
I placed a frying pan over the heat with some lard and waited for it to get hot. Once it was ready, I added the pork steaks and let them brown on both sides. This step helps the meat develop that appetizing color I like so much.Let them cook slowly
Once the steaks began to brown, I added a little water along with the leftover marinade. I lowered the heat and let the meat continue cooking until the water evaporated.Give them that final touch
After the water had evaporated, I let the steaks brown a little more in the pan to achieve that beautiful color and appetizing finish. Of course, you have to keep an eye on them to make sure they don't burn.
Finally, we served them with white rice, a simple combination that never fails at our table.
The Result: A Simple but Delicious Meal
This recipe isn't complicated and doesn't require any fancy ingredients. That's precisely why I like it so much. It's one of those simple ways of preparing meat that somehow becomes one of your favorites.
This time, however, the experience came with an extra challenge: the photographs! These aren't the most beautiful photographs you'll see in this series, but I still wanted to share the result. In the end, what matters is that the food turned out really good and we were able to enjoy a homemade dinner.
This chapter of From 0 to Chef reminds me that we don't always need to have every ideal ingredient or perfect conditions to prepare something tasty. Sometimes we have to substitute, improvise, and work with what we have. And, of course, learn from every experience.
Now I'd like to ask you something: Do you also have a simple way of preparing meat that always ends up being your favorite? I'd love to read your tips and discover other ways to prepare delicious pork steaks.
See you in the next chapter of this beginner who's still trying to become a chef, even though there's quite a long way to go!

Preparación paso a paso
