Blessings to all lovers of cooking in its various arts. Today I stop by to show you how easy, fast and economical it is to eat this dried fruit, as is the Auyama Seed.
The friend
@rlathulerie was showing us how to make an exquisite Auyama cake in this post. And as we said, Venezuelans love this dessert and well, once in a while we can prepare it. I invite you to read its recipe.
But I tell you something, from the pumpkin we can not only take advantage of its pulp, but also its seeds, since many years ago I have been doing this practice of consuming it. In my early college days, I remember that a classmate of mine, during the break time between classes, sold some nuts such as: corn, pistachio, pumpkin seeds, among others.
These dried fruits were somewhat expensive, few were the times I could buy them, but there was another colleague who indulged herself daily and very kindly shared them with me, they were tasty and the ones I liked the most were the pumpkin seeds. She told me that these seeds were not only divine, but also nutritious and that their constant consumption prevented the proliferation of cancer cells. Something that caught my attention because of its importance.
Then one day at home, my mom made a chicken soup and I entered the victuals, there was a pumpkin that had some big and fat seeds, I turned on the light bulb of ideas and did the procedure that I will show below to have on hand this nut, almost without any cost, more than a little dedication. Since these seeds are usually thrown away in the garbage.
To have some delicious pumpkin seeds, ready for consumption, we only need to have on hand Auyama, the amount can be as much as you have, in this case I used a piece of Auyama as 1kg, as you can see below.
As we were going to parboil pumpkin for breakfast, my husband chopped it and told me, here I leave your part, so you can take out the seeds, as you can see in my hand, there are the seeds where they are arranged in the fruit, I took them out until there are none left. I washed them well and put them on a plate.
Then I put a frying pan on the stove, once it was hot I put the seeds, and I kept stirring so that they would cook well on both sides, you have to put it over low heat, at first I went too far and they were going to burn on the outside and be raw on the inside. But no, thank God they turned out great, just the way I like them. You have to try them, that when you try to open them, they open easily and that the almond inside is dry and crunchy.
Once ready I served them on a plate to cool a little, so naturally they are very good and that's how I eat them, but I also added salt as seen in the second picture, for those who like them that way.
And so with these simple steps you have a tasty snack. Yes, these seeds have been my snack, my salvation for years. Whenever we buy pumpkin, whether to boil it, parboil it or prepare a delicious cream, I do this procedure and I always have something to pinch.
For example, today we made it parboiled, because we ran out of flour for the arepas for breakfast and we had to improvise, doing this, I also took advantage of the Seeds, to bring you this simple but practical step by step.
Another thing, or rather another trick I used, is that instead of making them in the kitchen, I put them in the sun for several days and they also look great, in fact I put them on top of the refrigerator where the sun shines.
They will say what is the trick, if it lasts much longer, to get the same result. Well, the thing is that if I make them in the kitchen, they are so delicious, toasted and salty, that my husband and my girls will eat them all at once.
Now I put them in the sun, I eat them alone, little by little and every time I go through the fridge I grab a few seeds and they serve me as a snack and distraction, since I open them I take out the inside and they eat them with everything and shell. In times of crisis, besides sardines and mangoes, pumpkin seeds were a salvation, a mangrove among the desserts.
