Banana Baskets with Pavilion

Warm greetings to the entire Foodies Bee Hive community. As you all know, one of our country's typical dishes is pabellón. It's a meal prepared with white rice, fried plantains, black beans, and shredded beef. In today's version, I've changed the style a bit; I decided to give the dish a more appealing appearance, although I used the traditional ingredients. I changed the presentation, giving it a new format that I think you'll all enjoy.

Canastas de Plátano Con Pabellón

Mis gratos saludos a toda la comunidad de Foodies Bee Hive. Como ya todos conocen, uno de los platos típicos de nuestro país es el pabellón. Una comida preparada con arroz blanco, tajadas fritas, caraotas negras y carne mechada. En mi elaboración de hoy he cambiado un poquito el estilo; decidí darle una apariencia más provocativa al plato, aunque utilicé los alimentos tradicionales. Cambié la forma de presentación dándole un nuevo formato, que creo será del gusto de todos ustedes.

This time, I started by giving the plantains a new shape and adding my own personal touch. I used both ripe and green plantains, as an alternative. My goal was to maintain the original flavors. I varied the cooking method after frying the plantains, shaping them into small baskets. To achieve the desired shape, I used some improvised tools.

En esta ocasión comencé dándole a los plátanos una nueva forma y le puse mi toque personal; para ello utilicé plátano maduro y plátano verde, como otra opción. Mi deseo es mantener los mismos sabores de la comida original; aquí varié la cocción de los plátanos una vez que los freí; las hice como canastas pequeñas. Para darles la forma, me ayudé de algunas herramientas que improvisé y me permitieron darle el acabado que deseaba.

Regarding the meat, I had prepared it the day before; I used the same seasonings, only this time I didn't shred it; I cut it into chunks, and it turned out very tender. The grains were prepared as usual.

Con relación a la carne, la había preparado el día anterior; utilicé los mismos ingredientes para sazonarla, solo que no la desmeché; esta vez corté en trozos, quedó muy blandita. Los granos mantuvieron su preparación como de costumbre.

The key difference lay in the plantain baskets, a presentation that undoubtedly captured my attention. In this dish, I wanted to preserve all the aromas, textures, and flavors of a Venezuelan classic that's part of our cuisine, while also presenting it in a different and more appealing way for the diner, who in this case was my family.

La variación fundamental estuvo en las canastas de plátano, una presentación que sin duda ocupó toda mi atención. En esta proposición quería conservar todos los aromas, texturas y sabores de un plato venezolano que forma parte de nuestra gastronomía y quería mostrar el plato con un aspecto diferente y más encantador para el comensal, que en este caso era mi familia.

  • 1 ripe banana

Preparation:

  • We begin by peeling the bananas and cutting them into three or four pieces; this varies depending on the size we want the baskets to be and the utensils we are going to use.

  • Comenzamos quitándole la concha a los plátanos y picamos en tres o cuatro partes; esto varía según el tamaño que queramos las canastas y los utensilios que vamos a utilizar.

  • Heat a pot over medium heat with enough oil to cover the plantain pieces. Stir occasionally to ensure even cooking, especially on the inside; this process takes about 10 minutes. I pierced them to check for doneness.
  • Montamos un caldero al fuego con suficiente aceite y esperamos que caliente. Preferiblemente, el aceite debe cubrir las piezas de plátano. Lo dejamos a fuego medio y vamos moviéndolos para que se cocinen uniformemente, sobre todo por dentro; este proceso dura como 10 minutos. Yo los pinché para saber si estaban cocidos por dentro.

  • We immediately began shaping it; first I used glass containers: one large and one small that could fit inside the large one; I used a plastic bag. We proceeded as follows: we placed the plastic bag inside the large container and inserted a piece of banana, followed by another piece of plastic bag. Now we took the small container and pressed down to flatten the banana, thus giving it the shape we wanted.
  • De inmediato comenzamos a darle la forma; primero utilicé los envases de vidrio: uno grande y uno pequeño que pudiera entrar en el grande; utilizo un plástico. Procedemos de la siguiente manera: colocamos el plástico dentro del envase grande e introducimos una pieza del plátano y seguidamente otro plástico. Ahora tomamos el envase pequeño y hacemos presión para aplastar el plátano, así va tomando la forma que queremos.

And looking for alternatives, I came up with something more practical; I managed to make the baskets with a lemon squeezer.

Y buscando alternativas, conseguí algo más práctico; logré hacer las cestas con un exprimidor de limón.

  • Then we remove the plastic and take out the piece with its basket shape.

  • We continue this step until all the baskets are made.

  • Now we put them back in the pot with the oil nice and hot. Raise the temperature a little so they get nice and toasted.
  • Ahora las llevamos al caldero nuevamente con el aceite bien caliente. Subimos un poco la temperatura para que queden tostaditos.

  • We remove the meat and fill it with the delicious stewed meat, garnishing with paprika and cilantro. We serve it.

Note: My pot wasn't suitable for frying these baskets, as it's not deep and would have used too much oil; I decided to tilt it slightly for better convenience, and it worked. I didn't use all the oil and adapted my pot.

Nota: Mi caldero no era el adecuado para freír estas canastas, ya que no es hondo e iba a gastar mucho aceite; decidí colocarlo un poco inclinado para mejor comodidad y me resultó. No gasté todo el aceite y amoldé mi caldero.
