Hello #PlantBased community, the week has moved on so fast. Here we continue testing with recipes for lunch. This time I bring a cream.
Traditionally milk is added to the cream to make it creamy. However, we tried to include other vegetables and it went very well. Also, Santiago doesn't really like the taste of cauliflower and this was the perfect opportunity to give it to him.
This recipe is enough for 600mL
Ingredients
200g pumpkin
100g of cauliflower
½ zucchini
1 chives
Sea salt
Preparation
Wash the vegetables and parboil the pumpkin and cauliflower.
Slice the chives and dice the zucchini
When the pumpkin is soft, add it to the blender along with the cauliflower, chives and zucchini. The liquid will be the same water where the pumpkin was boiled.
Blend at medium speed until creamy.
Serve in a cup and decorate with a coriander leaf
The mixture of these vegetables makes it creamier, also the flavor of the auyama masks the cauliflower which is excellent.
Remember to add salt to taste.

200g auyama
100g de coliflor
½ calabacín
1 cebollin
Sal marina
Preparacion
Lava los vegetales y sancocha la auyama y el coliflor.
Corta en rodajas el cebollín y en cuadritos el calabacín
Cuando la auyama este suave, procede agregarla en la licuadora junto al coliflor, cebollin y calabacín.
El líquido será la misma agua donde se sancocho la auyama.
Licúa a velocidad media hasta que se forme la crema.
Sirve en una taza y decora con una hojita de cilantro
La mezcla de estás verduras hace que quede más cremoso, también el sabor de la auyama enmascara el coliflor lo cual es excelente.
Recuerda añadir sal al gusto.
