Ingredients:
Bathua - 300 grams
Wheat flour (gehu atta) - 500 grams
Cumin seeds (jeera) - 1/2 teaspoon
Ginger pieces (adarak ke tukde) - 2 small
Green chilies (Hari mirch) - 2
Asafoetida (hing)
Salt to taste
Oil for frying kachori
Instructions:
Firstly, clean and separate the roots of bathua. Cut them into two pieces, then cut them separately. Boil them in a cooker until they are tender.
Let it cool, and after cooling, make a paste. Add cumin seeds, ginger, green chilies, and asafoetida to the paste and grind. Prepare a pesto and set it aside.
Now, take a bowl, add wheat flour, and mix it with 2 teaspoons of oil. Slowly add the bathua paste and knead the dough well.
Take a pan, heat oil, and make small balls of the dough. Flatten them with a rolling pin, and fry them in the heated oil until they turn golden brown.
Your crispy Bathua Ki Kachori is ready! Serve it with potato curry or dal.
