First time to bake by myself
I know I should be cooking and baking a lot more and I'm trying.
My two friends made carrot cake and I felt like okay I should too.
I followed a recipe I found online though I don't have all the ingredients.
I don't have nutmeg and my flour isn't whole-wheat. That's the only two though. Anyway it's still good!
Steps
I grated the ginger and carrots
2 cups carrot
1/4 - 1/2 tsp ginger
I mix the sugar and butter together must be liquid and runny, 1/2 cup butter with 1/2 cup sugar (i decreased it, it's supposed to be 1 cup)
Then,
Mix in the powdery ingredients, salt 1/4tsp, baking powder 2 tsps., Cinnamon 1/2 tsp, vanilla extract 1/2 tsp, flour 2 cups
I add the milk 1/4 cup, and the carrots and ginger
Mix it all and
Put it in the container
Left some space cause it's gonna puff up and put butter on the pan
I used a steamer that's why it's important to cover it (we don't have an oven anymore)
Good alternative, works just as well
I set the timer to 45 minutes, swapped the two trays and cooked for another 20 minutes
Put them on the plate and then voila
Done!
My son loves it! It's my first time to bake anything and to bake this. Fun!
The texture is too moist I guess I added more milk than I should have but better than dry cakes huh?
There are other alternatives like using
- wholemeal flour
- honey or stevia for sugar
And putting Greek yogurt instead of milk
Carrot cakes need cream cheese or cream will do, maybe on my second try I'll do this again but a bit level up on the ingredients
Regardless, carrot and ginger are very healthy and it's a fun way to get your kids to eat it with more willingness.
This will last up to four days in the fridge.
