Christmas is coming. Do you already feel christmassy? I do. I've been gathering some Christmas cookies ideas and want to bake and share some with my friends because I know I wont be able to finish them all :-D There are million of ideas and everything looks so tempting, especially sugar cookies in the shape of snowman, christmas tree, etc decorated with royal icing. They're super cute. Unfortunately I dont have those specific cookie cutters so I have to buy them first. WIll look for it this week end.

While waiting for the cookie cutters, I chose to make Soft Molasses Cookies. I remember I had a jar of molasses that I rarely use. I bought it to make bread but I finally dont make bread very often. So, I was thinking why not making cookie with molasses? I was also very curious how would it taste because I have never tried it before. Some say that it tastes like gingerbread and it did taste like gingerbread. I like it.

Molasses

Which molasses is suitable to make this cookie? After reading the recipe carefully, it is better to use dark molasses and not to use the blackstrap one. There is also another variant which is the lighter one. The composition is as follows: lighter-dark-blackstrap.

In Belgium or maybe in France as well, the dark type is normally the one we can find easily in the supermarket. It is normally written mélasse noir. If it is written mélassse verte, it refers to blackstrap molasses. It is more bitter and it is not much used in baked goods.

My Baking Experience

The recipe looks simple. So I was very confident that I wouldn't have a lot of problems. One thing that worried me more was I didn't want my cookies to spread too much. Well, my cookies ended up a bit fluffy, it spread a little so I decided to press it with wooden spatula to make it flatter. I cheated, problem solved :-D Also, there were no famous crack as it should be, but it's okay. The most important is the taste. They are good :-)

I only baked half of the dough today and I put the other half in the freezer so whenever I want some molasses cookies I can just bake them. In the mean time, I have to finish this batch first. I made 18 cookies today, I think it will go quickly, hehe..
