The eldest son is still on the way to clear his phlegm, so we are eating at home almost daily, except on the weekend. Let's see what else I cook. I usually cooked one-pot-dish due to my hectic lifestyle.



Stir Fry Pork Slices with Mixed Vegetables



Ingredients

  • Garlic and onions
  • some pumpkin and carrots
  • one broccoli head

  • soy sauce
  • oyster sauce
  • Pork slices (marinated with corn flour, soy sauce, salt and pepper)

Steps

Firstly, after washing the pork slices clean, I marinated them with corn flour, this was to soften the meat so that it would not be so tough. Then I added some soy sauce, salt and pepper and mixed them well.

Wash all the vegetables clean, cut according to your liking. I was in the mood to cut the carrot nicely this time, following my Mum's style.

In a pan of hot oil, saut茅ed the garlic and onions till aromatic. Always love the smell of nice garlic and onion oil.

Then, the marinated pork slices would be added in.

Continue to stir fry to mixed well the meat with the garlic and onions.

Then, I added in all the vegetables, mixed them well, added some water, and one tablespoon of oyster sauce. Covered and simmered until the vegetables were soften.

Later on, I realised I needed to add a teaspoon of sugar to balance out the savouriness.

Then, voila...!

The dish was done!

Placed the meat and mixed vegetables dish in a nice serving plate, and we had our sumptuous lunch.

This was how our simple lunch looked like. Just rice and the one-pot-dish. Luckily, my children and husband are not picky eater, they literally eat whatever I cooked. They never complain why there is only one dish, making my budgeting plan easier. I am so thankful for them.

Packing one in lunch box for my youngest son to eat on-the-go as he was tagging along me to run some errands.
