Hello, friends, food lovers, and community greetings. Today's recipe about breakfast buns. Here in Norway we have many different kinds of breads available in supermarket, in bakery or cafe. But we prefer to make our breads at home, many different ways and using different ideas.
So this time, the bread dough I made my regular bread dough, but I filled the buns with apple butter and spiced potato to make them different.
Ingredients as usual:

1 cup white flour
1 cup coarse wholemeal flour
1 cup fine wholemeal flour
1 tbsp sugar
1 tsp salt
1 tsp dry yeast
1 tsp baking powder

sweet filling
Home-made apple butter
A few raisins and 1/2 cup sunflower seeds
for savory filling
3 medium-sized cooked potatoes
1 green chili
3 cm ginger
5 sprigs of fresh coriander
1 tsp salt
1/2 tsp pepper
1 tsp coriander powder
1/2 tsp cumin powder
1/2 tsp turmeric powder
1/2 cup sunflower seeds.

Put all ingredients together in a bowl and mix them.

Add warm water gradually.

Mix it using the wooden fork.

Add 1 tbsp of oil and keep aside until it doubles.

When the dough became bubbly enough in the double quantity

Form small balls from the dough, adjusting the size to your preference.

I used my homemade sugar-free apple butter. You can use apple jam or any other

It is purposefully caramelized.

Take one ball and flatten it using your hand or use rolling pin.

Put an appropriate amount of apple butter/jam on it.

Fold the edges of the dough together, pinching to seal all sides.

Make them according to your requirements. I made around 11 of them

Brush some water on them. and sprinkle some sunflower seeds and raisins. Optional. Cover and keep aside for around 10 minutes before baking

Bake them in a preheated oven at 180 C for around 20-24 minutes.

keep them on the rack for cooling down.

Making savory buns
The remaining dough and filling Ingredients:

3 cooked potatoes mashed using a cup
1 tsp coriander powder
1/2 tsp cumin powder
1/2 tsp turmeric
5-6 sprigs of fresh coriander
1 green chili, finely chopped
3 cm fresh ginger, finely chopped.
salt for taste and black pepper.

Mix all spices in the mashed potatoes. The filling for savory buns.

Use the potato mixture as filling in buns.

Take one portion of the dough and flatten it.

Place one tbsp of the potato mixture on it.

Folding all edges, make a sealed bun.

After all the buns are done, use some water and sunflower seeds to coat the buns.

Dip the bun in the water.

And coat the seeds on it.

They are ready. Cover and keep them aside for around 10 minutes before baking them.

Bake them at 180 C for about 20-25 minutes, depending on each oven's settings.

These buns are very convenient for breakfast. They pair well with tea or coffee and are perfect for traveling.
