Dear food, today I want to share this delicious recipe for Peruvian-style ceviche, in my case I have prepared different ceviche but I had never prepared it this way.
To start we need the following ingredients:
It is recommended to buy a good fresh fish, sole is a good option. The first thing we are going to do is wash the coriander, celery and the chili pepper well, remove the seeds from the chili, then peel the garlic. We proceed to cut the red onion into julienne, Chili, celery, coriander cut into small squares.
Now we start the preparation of a fish broth to make the tigra milk, for that we do the following: We use a small pot, add pieces of fish, onion hearts, chili pepper, coriander leaves and boil from 5 to 6 minutes. After time we are going to strain and let it cool.
Chop some pieces of boneless fish trim, add a tablespoon of salt, squeeze 5 lemons, 4 garlic cloves, onion, celery, 1 hot pepper and the fish stock. Blend for 30 seconds, finally strain.
So we already have the tiger milk. Now we are going to prepare the ceviche using a square container, we place the squares of white fish that is very fresh, season with salt, pepper, garlic, coriander and minced chili.
We are going to squeeze the lemons and mix.
We add the onion cut in julienne and finally we add the milk of tigra, we proceed to mix.
The fish must be completely covered by the tiger milk, we test that it is well of salt and lemon to taste and let it rest in the refrigerator for 3 hours. My preference is to leave for 12 hours for a better flavor.
Serve and garnish with lettuce and some coriander leaves.
