Today I'll be showing you my mother's recipe for Egg Sauce.
In my house, we make this usually during the holidays or weekends. Generally, during free time. It's awesome to eat with bread, yam, spaghetti, or any type of starchy food/pasta.
Without further ado, let's get into it.
For this recipe you need a few things:
4 fairly large Tomatoes
1 medium sized Onion
4 Eggs
Vegetable oil
Curry Powder
Mackerel in Tomato Sauce
1 seasoning cube
Chicken Spice
Ground red bell peppers
Ground crayfish
Ground (scotch bonnet + cayenne) pepper
Ground garlic
Salt
Here's the steps to make this delicious dish:
First, cut up the tomatoes and the onion.
Break the eggs in a plate and beat them.
Next, pour half teaspoon of curry powder + 1 seasoning cube + half teaspoon of chicken spice + 2 teaspoons of ground red bell peppers + 2 teaspoons of ground crayfish + half teaspoon of ground (scotch bonnet + cayenne) pepper + half teaspoon of ground garlic into a plate and mix up.
Then, preheat your pot/pan for a minute, then add 2 soup spoons of vegetable oil and let it sit for a minute on low heat.
After this, add in your sliced tomatoes and onions and fry them on low heat for 3 minutes.
Next up, add in your mackerel in tomato sauce to the mix and stir it around and let it fry for a minute
Now, add in your beaten eggs and increase the heat. Stir it around still the eggs become solid. This should take about a minute or two.
Now, your Egg Sauce is ready!
