My Mathias has been a little sick these last few days, and motivating him to eat has been quite an odyssey, as his response in most cases has been "not mom", today I wanted to try some cookies, but I had to make them as healthy as possible, so it occurred to me to make them out of pumpkin, but adding a little cocoa to make them more attractive to him, and thank God I managed to get him to eat something.
Taking into account that I still have some pumpkin left of the one I got this week, this recipe fell like a ring to the finger, In addition the pumpkin is rich in beta-carotene, antioxidants and vitamin C, which makes it great for the strong flu that has given him, since beta-carotene helps strengthen his immune system, and also favor the prevention of viral infections, although in this case it is already a little late because this virus reaches him, it is still never too late to provide food to help you strengthen your body.
Like all biscuits, this is an extremely easy recipe to make and we can adapt it to any vegetable, which makes you love them even more. Come with me and I will show you how to make these delicious and easy biscuits. Enjoy! .
Ingredients
3 Cups of wheat flour.
200 gr pumpkin puree.
3/4 Cup of sugar.
2 Eggs.
1 tsp Sodium Bicarbonate.
1/2 tsp cinnamon powder.
2 tablespoons sugar-free cocoa powder.
50 ml of sunflower oil.

In a bowl add the sugar and the eggs, and with the help of a beating balloon we incorporate until forming a homogeneous mixture and we are adding without stopping beating the oil, once well emulsified everything, we add the mashed pumpkin and we integrate well.
On the other hand we mix the flour of wheat with the cinnamon, sodium bicarbonate and the cocoa powder and we pour in the mixture of the eggs and the mashed pumpkin, with the help of a palette we integrate everything until obtaining a homogeneous mass.
With our dough ready and with the help of two spoons, we arrange the biscuits in a tray with baking paper, leaving space between them as they will grow in the oven, we take them to a preheated oven at 180 ° C for about 15 minutes.
To make these cookies more appealing to My Mathias I put some melted chocolate in them, although it's not really necessary, they are delicious without adding anything. The goals were met, I made this kid eat something, and I've added a new recipe to my list of favorites.
