Yogurt is a product that I think is currently very expensive in Venezuela (like so many others), which is why I hardly ever eat it—the 150-gram container, which is the smallest size, costs more than two and a half dollars, and you eat that much yogurt so quickly that you don’t even realize you’ve finished it.
So, in order to enjoy it in the quantities I like while spending less—and since I’m focused on increasing my intake of probiotics—I decided to make it myself. After looking at many different recipes, I bought the necessary ingredients and took the plunge.
I apologize in advance because these aren’t the best photos; I was so focused on the preparation process—making sure the temperatures were right—that I forgot to take better pictures, and once it was ready, I forgot to take a photo of it once it was served. I hope you’ll forgive these oversights. I assure you that the instructions will be clear and that this method really does work for making delicious yogurt.
Let’s head to the kitchen!
Ingredientes (Ingredients)
- 800 g de agua.
- 200 g de leche.
- 120 g de yogur (usé yogur griego).
- 800 g of water.
- 200 g of milk.
- 120 g of yogurt (I used Greek yogurt)
Preparación (How to make it)
Heat the water until it reaches 50 degrees Celsius; I used a digital thermometer to check the temperature.
Add the powdered milk (sifted beforehand) and whisk until dissolved.
Mezcla suavemente.
Heat the milk until it reaches 80 degrees Celsius.
Once the milk has reached this temperature, remove it from the heat and place the pot in a reverse water bath.
Stir until the milk reaches 48 degrees Celsius, then add the yogurt at room temperature. Mix gently.
Place the mixture in a container with a lid. Cover it with a tablecloth or a cloth—the idea is to wrap the container very tightly—and place it in a dark place.
I placed the container inside the oven. In my experience, it sat there for 15 hours. I imagine that the resting time depends on many factors and can vary.
I’ve continued to research temperatures further, and some sources indicate that to add the yogurt, you have to wait until the milk’s temperature drops to 42 or 43 degrees Celsius, and that the starter yogurt should be mixed with a portion of this milk before adding it all at once. Perhaps because I didn’t do it that way, my yogurt took so long to be ready. Still, even though waiting wasn’t a problem for me, I can try following these steps and see if it shortens the setting time.
¡Me encantó!
For my first time making yogurt, it turned out really well, and of course I'll make it again.
I ate it plain, with blackberry jam, made a dressing with garlic and parsley, and also used it as a marinade for chicken thighs.
I loved it!
I hope you like it!
