Wine and banana bread together is not your typical combination. However, a simple get-together with friends at home, chatting away while baking paved its way to a lovely afternoon. Kim ybanezkim26@ybanezkim26, Camille millycf1976@millycf1976, my daughter, Anais, and I found ourselves baking in our open dining and kitchen.

iamyohann@iamyohann made an Easy & Quick Coconut Banana Recipe previously but I put a spin to it by tweaking his recipe to replace sugar with condensed milk and deleting the desiccated coconut. He hates cinnamon so I'm putting some with mine (mwahaha).

I had some overripe bananas in the fridge and some leftover walnuts. Perfect!

Here is the cast of characters needed for baking:

Dry Ingredients:
  • 2 cups All-Purpose Flour
  • 1 tsp baking soda
  • 1/2 tsp of salt (3g)
  • 1 tsp ground cinnamon
  • Optional: 3/4 cup chopped walnuts or pecans
Wet Ingredients:
  • 3 ripe (better overripe) bananas, mashed with a fork
  • 1/2 cup of butter (110g) softened to room temperature
  • 1 tbsp vanilla extract
  • 2 large eggs
  • 1 cup / 1 can of sweetened condensed milk

Tools: 2 Mixing bowls, 2 non-stick loaf pans, mortar, and pestle, spatula, whisk, your sense of humor, and positive spirits.
Optional: baking parchment paper

Wine is optional. Let's begin!

Instructions:

Pre-heat oven 250°C or 480°F. Add baking parchment paper to your loaf pan or grease it with butter.

Mix the dry ingredients in the mixing bowl and do the same with the wet ingredients in another bowl. You can use a stand mixer for the wet ingredients but personally, a whisk would do.

Slightly roast the walnuts and crush them in mortar and pestle. Fold in the nuts.

Mix well and once you're satisfied, add the dry ingredients to the wet mixture. Continue to whisk thoroughly but do not over mix it.

Pour the batter into the baking pan. I only have one loaf pan so I used the remaining batter into a greased non-stick muffin tray.

Place everything in the oven for 25 to 30 minutes. Keep checking and once it turns golden, insert a toothpick. When it comes out clean, then it's ready.

Remove from the oven and allow it to cool down.

It could last up to a week in the refrigerator. In our case, we consumed most of it and had the remaining banana bread slices for snacks the next day.

Serve with freshly brewed coffee or enjoy it with wine and conversations like we did!
