Quiche is the ultimate french comfort food. It's a tart made up of pastry crust that is filled with savory goodness. It's something that I have picked up on while shortly living in France with family. It's so easy to do especially when you have a store-bought crust. You can pretty much create your own version and fill it up with whatever savory ingredient is available in the fridge.

Quiche Lorraine is definitely a classic containing bacon, cream and eggs.

Quiche Lorraine
Servings: 8



Ingredients:

Une pâte brisée - 1 pie crust pastry on a baking sheet
3 eggs
1 cup of Crème Fraîche / Sour Cream
1 cup of All Purpose Cream / Heavy Cream
1 teaspoon of Dijon Mustard
200 grams of lardons / bacon
A pinch of grated nutmeg or muscade
Salt
Ground Black Pepper
1 1/2 teaspoon of melted butter
Grated Emmental cheese / Swiss / Gruyere

Tools: Oven and Round Quiche or Tart Pan

Preparations:

1. Pre-heat oven to 190 deg C or 375 F. Set the pie crust on the baking dish and puncture with a fork. Allow to bake for a few minutes until the dough slightly dries and take it out of the oven.

2. In a separate pan, saute lardons/ bacon until slightly golden.

3. Grate nutmeg

4. Beat the eggs in a mixing bowl. Add in the cream, bacon (lardons), nutmeg, melted butter, dijon mustard, salt and pepper. Mix thoroughly.

5. Pour the mixture on your pie crust. Optional: Sprinkle grrated cheese on top. Leave it in the oven for about 30-35 minutes until it rises. Serve hot.

I skipped onions or shallots in this one because my daughter doesn't like them but having chopped onions to the mixture would add more depth to the taste. It's way even better if you have leeks.

The original french Quiche Lorraine doesn't have cheese. I like it with though. I collected various recipes and tweaked it to create this version. Since we hardly find a store bought ready-made pie crust available here, we now make pie crust pastry at home well in advance and keep it stored in the freezer for the time we need them. If you're doing keto diet, feel free to create a crust-less version.

Quiche Lorraine is one of my husband's favorite feel-good meal so when the house smells of this newly baked savory tart, he gets excited. Enjoy!
