There are many versions of Chia Pudding online but this particular recipe is my favorite. The inspiration came from Pick Up Limes' Chocolate Chia Pudding but I tweaked it by deleting the chocolate from the recipe and using ingredients that are readily available.
I have invited Camille @millycf1976 over for coffee and she brought with her some dates.
The preparation happens the night before so it's perfect for those busy mornings. I like cinnamon and that serves as the main spice complimented well by vanilla. The dates add another layer of sweetness to the mix.
Chia Pudding Recipe
Ingredients:
Chia Pudding Base for each jar
- 3 tablespoons of chia seeds
- 1 cup soy or coconut milk
- 3 dates, chopped coarsely
- 1 tbsp Goji Berries (Optional)
- 1/8 tsp Ground Cinnamon
- 1 tsp Vanilla Extract
Topping:
- 1 banana sliced
- 1-2 tbsp Pumpkin seeds
- 1 tbsp Flax Seeds
- 2 dates, roughly chopped
Tools: Spoon, 2 mason glass jars or re-purposed glass jars with cover, knife and chopping board, and a smile
Preparation:
Mix all chia pudding base ingredients in a jar. Combine well to avoid clumps.
Cover and refrigerate overnight. Those days we forget to make them the previous day, chill 2 hours ahead in the fridge.
Add the toppings and stir to your heart's content and enjoy!
I also prepared some batches 3 days in advance and they were still good when stored well in the fridge. It is best when served cold.
Camille and I enjoyed one jar each over coffee and conversations just like we did that day we had Wine and Moist Banana Bread.
