Another FOODlog of my Mum's cooking. She makes some of the best tasting homecooked meals anywhere. Malaysian slash Chinese-type of cooking has always been what I ate growing up and its super delicious.

The other day she cooked some fried fish and a vegetable dish. We normally eat some sort of protein and also a vegetable dish. This would be a typical meal.

The fish was a whole black pomfret that was scaled and cleaned then shallow fried in vegetable oil. It was first seasoned simply with salt for about 15 minutes at room temperature. Super simple, delicious and basically 2 ingredients which is the fish itself, and salt. Simplicity at its best.

For the vegetable, she cooked stir fried red spinach with minced pork. Its all stir fried in some oil with shallots and garlic and then in with the minced meat and cooked for 5 minutes then the washed spinach goes in and stir fried for another 5-10 minutes. Season with salt to taste.
