Breakfast is important. Sleep is important. If I am honest, sleep trumps breakfast for me on most days. I will usually sleep until the last possible minute, and in a matter of minutes, I am on my way. I grab something quick, and then I am out the door.
I don’t have any small kids at home, so everyone knows, breakfast is on them. My husband is great about this, and during the week he usually whips up breakfast for us both. It’s our weekday tradition. Breakfast and coffee together in the morning. I look forward to this, and I love starting my day this way.
On the weekends, I take care of breakfast. Many times I will prep Friday night for breakfast and pop it in the oven in the morning to finish it off. This weekend we are quite busy, so I decided to make some breakfast sandwiches today. We volunteer in our community and I like to bring some snacks for those who join in and help. This recipe is easy to double and make ahead, making it easy to bring along. These little sliders can be made any way you like. This is a combination we enjoy, I hope you like it too.
Breakfast Sliders
- 1 Package of Hawaiian Bread rolls (the package here comes with 32 rolls)
- 6 oz Cream Cheese- softened
- Scallions
- 1 Tbsp Chili Garlic Sauce ( or more if you like it hot and spicy)
- 1 cup Shredded Cheese
- 6 eggs scrambled
- 10 Genoa Salami slices
Topping
- 2 oz Maple syrup ( ok, this is a guess, I usually just give the bottle a good squeeze )
- 3 Tbsp butter
- Melt the butter and add syrup, stir to combine - put aside
- Combine the softened cream cheese, Chili Garlic Sauce, ½ cup shredded cheese and combine
- Split the Hawaiian rolls in half so you have tops and bottoms (do not individually separate them!)
- Spread the cream cheese mixture on the bottom bread
- Add a layer of cooked eggs, then a layer of salami, finally add a layer of cheese
- Add the top layer of bread
- Cut through the sliders so they are easy to separate when they are done
- Pour the butter and maple syrup mixture over the top
- Cover with aluminum foil
Bake them in a 350 degree F oven for about 20 minutes, or until heated through when you are ready.
This cream cheese mixture is delicious! If you have extra it makes a nice spread on any sandwich
Layer the egg evenly, and add enough shredded cheese for it to melt and stick together
The buns are never quite even, don't worry about that. I usually just start cutting at one end and go straight down. Nobody will notice :)
These sliders can be made with any filling you like. I sometimes add sliced ham, or just ham and cheese with no egg. The key here is the cream cheese mixture and the butter and syrup topping.
