Hígado de res con cebolla caramelizada [beef liver with caramelized onion]
Buenas noches amigos espero tuvieran un excelente fin de semana, les cuento que no soy muy fanática del hígado de res pero si me encanta el hígado de pollo , pero mi mamá me regaló hígado de res y no estaba muy convencida ya que nunca me a quedado bien siempre quedaba muy seco entonces mi mamá me dijo que el secreto es no dejar cocinar demás el hígado ya que por eso me quedaba seco y me compartió otros pequeños tips y el resultado me gustó bastante, les dejo esta receta y su paso a paso .

Comienzo por sazonar el hígado con un diente de ajo ya puede ser a su gusto si lo quieren picado o triturado en este caso yo lo corte en cuadritos pequeños, y un toque de sal lo masajeó super bien para que quede por todo lados el sazón.

En una sartén coloco media cucharada de aceite de oliva y dejo calentar super bien y voy a sellar el hígado dando vueltas y vueltas tratando que esté bien cocido pero no sobrecocido ya que es el error que cometía antes y quedaba como suela de zapato , está vez cuide mucho el tiempo de cocción es un gran consejo que me dio mi mamá y les comparto .

Cuando está cocido el hígado lo reservo y comienzo a rebanar cebolla y el ají.

En una sartén con un poquito de aceite colocó a fuego bajo a transparentar la cebolla junto al ají , luego agrego media taza de agua y dejó cocinar a fuego bajo unos 20 min hasta que la cebolla suelte su azúcar natural y se comience a caramelizar.

Ya sólo me queda servir el hígado y colocarle arriba las cebollas , lo acompañe con plátano hervido y me gustó bastante creo que el secreto es no sobre-cocinar para que quede en su punto .
