Hoy les quiero compartir una receta t铆pica de mi Estado " Las Arepas Andinas" se trata de unas arepas elaborada con harina de trigo, pero en esta ocasi贸n quise compartir la versi贸n m谩s saludable, agreg谩ndole ingredientes que aportan fibra y dan saciedad como es el caso de la avena y el afrecho, est谩 receta la hice en compa帽铆a de mi madre, aprovechando que vino de visita a la Isla de Margarita, es una receta que me encanta porque ha pasado de generaci贸n en generaci贸n a mis hijos les fascina, espero que ellos aprendan a elaborarla y contin煤en con la tradicion familiar. Les aseguro que son exquisitas, perfectas para el desayuno, cena o para merendar, generalmente en el T谩chira la acompa帽amos con cuajada (queso fresco suave) y natilla, es muy f谩cil de hacer, aconpa帽enme a revisar los ingredientes y el paso a paso馃憞

INGREDIENTES: para 4 arepas de 25 cms

  • 1 kg de harina de trigo todo uso

  • 250gramos de Avena en hojuelas

  • 3cda de afrecho

  • 3 huevos

  • 200 ml de leche pasteurizada

  • 1cda de levadura

  • 3 cda de az煤car morena

  • 1cdta de sal

  • 100 gramos de mantequilla

  • 2 cdas de queso crema

  • Queso tierno para rellenar ( cuajada, Guayanes, queso de mano, queso telita)

PREPARACION:

Paso 1:

Primero activamos la levadura, para ello, colocamos en un taz贸n la levadura con 50 ml de leche y 1 sobre de splenda, dejamos en reposo por 15 minutos aproximadamente.

Paso 2:

Aparte en un bolw grande agregamos los huevos, los mezclamos, luego incorporamos el az煤car moreno, la mantequilla, el queso crema y la sal, Incorporamos con un batidor de mano.

Paso 3:

A continuaci贸n agregamos la levadura activada a la mezcla anterior, seguidamente incorporamos el resto de los ingredientes: la harina, el afrecho y la avena( previamente hidratada con un poco de leche) y el resto de la leche.

Paso 4:

Mezclamos a mano hasta incorporar todos los ingredientes, luego lo llevamos a la mesada con un poco de harina y la amasamos por unos 10 minutos aproximadamente. Reservamos en un bolw, lo tapamos con pa帽o de cocina y lo dejamos reposar por 3 horas.

Paso 5:

Transcurrido el tiempo dividimos la masa en 4 bolas. Calentamos una sarten , le colocamos un poco de mantequilla. hacemos con la bola la forma de una arepa grande la colocamos sobre la sart茅n y la estiramos con las yemas de los dedos, hasta llegar a los bordes, dejamos cocinar a bajo fuego y la volteamos por ambos lados, hasta que est茅n doradas. Retiramos y cortamos en cuartos.

I assure you that they are exquisite, perfect for breakfast, dinner or snack, usually in T谩chira we accompany it with cuajada (soft fresh cheese) and custard, it is very easy to make, join me to review the ingredients and the step by step馃憞

INGREDIENTS: for 4 arepas of 25 cms.

  • 1 kg of all-purpose wheat flour

  • 250 grams of oat flakes

  • 3 tbsp bran

  • 3 eggs

  • 200 ml pasteurized milk

  • 1 tablespoon of yeast

  • 3 tablespoons of brown sugar

  • 1 teaspoon salt

  • 100 grams of butter

  • 2 tablespoons cream cheese

  • Soft cheese for filling ( cuajada, Guayanes, queso de mano, queso telita)

PREPARATION:

Step 1:

Mix by hand until all the ingredients are incorporated, then we take it to the counter with a little flour and knead it for about 10 minutes approximately. We reserve in a bowl, cover with kitchen towel and let stand for 3 hours.

Step 5:

Once the time has elapsed, divide the dough into 4 balls. Heat a frying pan, cooicalosnum him a little butter. do with the ball in the shape of a large arepa, place it on the pan and stretch it with your fingertips, until you reach the edges, let it cook over low heat and flip it on both sides, until golden brown. Remove and cut into quarters.
