Finally mastered the skill of pan frying fish on a not non-stick pan. It is all about heat and timing.
- Put some peanut oil in a cast iron skillet and use medium heat to heat it up.
- Turn down the heat to medium-low and put the fish in.
- Put on a cover so oil doesn’t splash outside the pan.
- Very important - Don’t move the fish until the bottom side is cooked.
- Turn the fish over and don’t move it again until cooked.
By the way, this fish is from my pool. It jumped out last night, still fresh but not super fresh so, instead of steam it, I pan fried it.
