It's such a dark gloomy day here in Perth today so it's time to crank some real hearty winter food!
This recipe is from my old restaurant but I am doing it tonight for German themed night.
Goulash!
This stew style dish is just stunning and really warms you from the inside. Start with some nice diced beef which you can get from any butcher. Usually it will be quite tough meat as we are going to cook this for at least 2.5 hours.
I like to brown the meat off prior to putting in my pot so get a large pan and really heat it up with some veg oil.
Start frying off the meat in small batches so you don't stew the meat. We want to brown it like below.
Now place your meat into a good sized pot along with paprika and garlic. All ingredients listed below.
Add a bottle of red wine of your choice and balsamic vinegar.
Now in the pan where you fried your meat, fry off your diced onions till they are nicely browned. Add to your pot.
Serve with your favourite sides such as mash potato or cook of some pasta and throw it through. Works a treat!
Recipe
1 kg diced beer
5 onions diced
1 cup paprika
2 tablespoons of garlic paste ( see my posts )
1 bottle of red wine
2 tablespoons of balsamic vinegar
A pinch of mixed herbs
Salt and pepper to taste

Now add some water to coat the stew but not to much. You can always add a bit more later. Turn heat down to a gentle simmer and let it do its work!
After 2 hours try your meat and if it's tender then just pull it off the heat and let it rest.
It will be a touch watery so now you can add some corn starch to achieve desired consistency or serve as I'd like a soup. Season to taste.
