Greetings to all beautiful vegan community! I hope and everyone is well, and getting ready to rest for another weekend. 馃

Today I'm going to share with you a recipe that is the first time I make it, and I tell you that yuccas had never given me so much work as today,

I had always made my fried yuccas, which I like so much in the easiest and most traditional way, but this time I wanted to prepare them in a way that I saw on the internet and caught my attention, so I said to myself, who said fear! the truth is that I put my hands to work and I do not regret it because despite the work it gave me they were very rich, at least the effort was worth it.





I accompany these fried yuccas with a delicious paprika dressing, it has a sweet and spicy touch that makes it irresistible, so please join me in preparing this fun and tasty recipe.

Fried Yucca Pancakes.

Ingredients:

  • Approximately 800 grams of yucca.
  • 4 spoonfuls of corn starch (cornstarch).
  • 1 cup of Coconut Milk.
  • 1 pastry bag or you can also use a plastic bag.
  • Salt to taste.
  • Oil for frying.


Preparation:

We take the yucca and clean it very well.

We chop it as indicated in the photo and put it in a pot with water, so that it covers the yucca, we put it to cook, cover it, and wait for it to soften.

When our Yucca is soft, we take it out of the pot, wait for it to rest a little, and then we take out the veins that it usually has, this is to mash it very well with a fork or a masher, I did it with a fork.

We are crushing the yucca very well and we put it in a mold, to continue working it better.

Now add the 4 tablespoons of corn starch and salt to taste.

Mix, so that the ingredients are well integrated.

Next we are going to add little by little the Coconut Milk, and continue mixing and mashing with the fork so that we have a smooth dough, it will look like a puree but more fluid. (This step is essential for our pancakes do not disintegrate when they are frying, so I emphasize that the mixture should be mashed very, very well) This is where I sweat cold hahahahahaha, well that's how you learn.

Now we are going to place our mixture in the sleeve.

In a frying pan with very hot oil we start to make our pancakes of the desired size.

When they are well browned on one side turn them over to cook, they last approximately 3 minutes on each side, although if your kitchen is very fast the cooking time may be less.

When they are ready, place them on a plate with absorbent paper.


Spicy Sweet Paprika Seasoning.

Ingredients:

  • 2 red bell peppers or the ones of your preference.
  • 1 Pinto Tomato.
  • 3 Garlic.
  • 2 Hot Peppers or Hot Chili Peppers.
  • 1 small onion or half a large onion.
  • 2 tablespoons of brown sugar.
  • 1 cup of Vegetable or Olive Oil.

First, preheat the oven, temperature approximately 170 degrees.

After washing the vegetables very well and cleaning them, we are going to chop the paprika and put it in a baking pan.

We continue chopping the tomato and put it together with the paprika, as well as the garlic and onion.

We put them in the oven at a temperature of 170 degrees and let them roast so that they burn a little.

Then we are going to proceed to throw all that in a blender.

We are going to add the 2 tablespoons of sugar, the cup of oil, salt to taste and the spicy chili, which I forgot to take a picture of, I apologize for that.

We blend.

And ready, it will be a smooth and unctuous cream.

Now we accompany it with our yucca pancakes.


Note: it is always better to have the dressing ready before frying the yucca, so you can eat it warm and crunchy, the dressing also serves as a side dish for baked potatoes, toasted bread, crackers, etc.

Saludos a todos hermosa comunidad vegana! espero y todos se encuentren bien, y prepar谩ndose para descansar un fin de semana m谩s. 馃

Hoy les voy a compartir una receta que es la primera vez que la hago, y les comento que las yucas nunca me hab铆an dado tanto trabajo como hoy,

Siempre hab铆a hecho mis yucas fritas, que tanto me gustan de la manera m谩s f谩cil y tradicional, pero esta vez quise prepararlas de una manera que vi por internet y llam贸 mi atenci贸n, as铆 que me dije a mi misma, qui茅n dijo miedo! lo cierto es que puse manos a la obra y no me arrepiento porque a pesar del trabajo que me dio quedaron muy ricas, por lo menos el esfuerzo vali贸 la pena.





Estas yucas fritas las acompa帽o con un delicioso aderezo de piment贸n, tiene un toque dulce y picante que lo hace irresistible, as铆 que por favor te pido que me acompa帽es a preparar esta divertida y rica receta.

Tortitas de Yuca Frita.

Ingredientes:

  • 800 Gramos aproximados de Yuca.
  • 4 Cucharadas de Almid贸n de Ma铆z ( Maicena).
  • 1 Taza de Leche de Coco.
  • 1 Manga repostera o tambi茅n se puede usar una bolsa pl谩stica.
  • Sal al gusto.
  • Aceite para fre铆r.


Preparaci贸n:

Tomamos la yuca la limpiamos muy bien.

La picamos como indica la foto y la ponemos en una olla con agua, de manera que tape la yuca, la montamos a cocinar, tapamos, y esperamos a que se ablande.

Cuando ya nuestra Yuca est茅 blandita, la sacamos de la olla, esperamos que repose un poco, y luego sacamos las venas que suelen tener, eso es para luego triturarlas muy bien con un tenedor o un pisa pur茅, yo lo hice con un tenedor.

Vamos triturando muy bien la yuca y la ponemos en un molde, para all铆 seguirla trabajando mejor.

Ahora colocamos las 4 cucharadas de Almid贸n de Ma铆z y sal al gusto.

Mezclamos, que se integren bien los ingredientes.

Seguidamente vamos a colocarle poco a poco la Leche de Coco, y seguimos mezclando y triturando con el tenedor de manera que nos quede una masa suave, se va a ver como un pur茅 pero m谩s fluido. (Este paso es esencial para que nuestras tortitas no se desintegren cuando se est谩n friendo, por eso les hago mucho hincapi茅 en que la mezcla se debe triturar muy pero muy bien) Aqu铆 fue donde yo sude frio jajajajaja, bueno as铆 es que se aprende.

Ahora vamos a colocar nuestra mezcla en la manga.

En una sart茅n con Aceite bien caliente empezamos a hacer nuestras tortitas del tama帽o deseado.

Cuando est茅n bien doraditas por un lado se voltean para cocinarse, duran aproximadamente 3 min por cada lado, aunque si tu cocina es muy r谩pida el tiempo de duraci贸n puede ser menos.

Al estar listas vamos colocando en un plato con papel absorbente.


Aderezo dulce picante de Piment贸n.

Ingredientes:

  • 2 Pimentones Rojos o los de tu preferencia.
  • 1 Tomate Pint贸n.
  • 3 Ajos.
  • 2 Aj铆s o Chiles Picante.
  • 1 Cebolla peque帽a o media Cebolla grande.
  • 2 Cucharadas de Az煤car Morena.
  • 1 Taza aproximada de Aceite Vegetal, o de Oliva.

Lo primero, precalentar el horno, temperatura aproximada 170 grados.

Despu茅s de lavar muy bien lo vegetales y limpiarlos, vamos a picar el Piment贸n y lo ponemos en un molde para hornear.

Continuamos picando el Tomate y ponemos junto con el Piment贸n, as铆 mismo los Ajos y la Cebolla.

Metemos al horno, a una temperatura de 170 grados y dejamos que se asen de manera que se quemen un poco.

Luego vamos a proceder a echar todo eso en una licuadora.

Le vamos a poner las 2 cucharadas de Az煤car, la taza de Aceite, la Sal al gusto y el Aji picante, al cual se me olvido sacarle foto, me disculpo por eso.

Licuamos.

Y listo, va a quedar una crema suave y untuosa.

Ahora la acompa帽amos con nuestras tortitas de yuca.


Nota: siempre es mejor tener el aderezo listo antes de fre铆r la yuca, para poderla comer calentitas y crujientes, el aderezo sirve como acompa帽ante tambi茅n para papas horneadas, pan tostado, galletas saladas, etc.
