ENGLISH.

Greetings dear vegan friends, I hope and you are very well, happy weekend. 🤗❤️

Today I will share with you a snack, they are some balls that I usually make them with corn flour and fried, but this time I wanted to experiment with a healthier recipe taking advantage of the Coconut Flour I have at home.

Those who know me and have read my recipes know how much I love coconut, and I have experimented a lot with the drink making creams, but this time I wanted to take a little risk with this recipe.

Certainly this flour is nothing like the one we usually use, either corn or wheat, so its preparation is very different and of course its taste and texture as well.

I took the opportunity to make some baked and others fried to see which version I would like more, but I will give you my opinion at the end of the explanation of the recipe.

Now without further ado I invite you to be my companion in the preparation of these vegan dumplings! 😊

Ingredients:

  • 100 Grams of Coconut Flour.
  • 25 Grams of Ground Flaxseed.
  • 1 and a half Cup of very hot filtered water.
  • 5 Tablespoons of Olive Oil or the Vegetable Oil you have at your fingertips.
  • 1 teaspoon of Cumin.
  • 2 teaspoons of salt.
  • 2 large or three small Garlics, that will be to your taste.
  • 5 sprigs of Cilantro approximately, you can also use Oregano.
  • Pepper to taste (optional).
  • 1 teaspoon of baking powder.
  • Enough vegetable oil for frying.

Method of Preparation.

We are going to take our Coconut flour and pour it in a bowl.

Then add the Linseed.

And we also add the Cumin Powder, the baking powder, the Salt and we mix with a manual mixer or with a spoon, we integrate everything very well.

Now we add the Olive Oil, which would be 2 tablespoons, and we are also going to add the water little by little, stirring the mixture with a spoon, trying not to make the mixture watery, that is why it is important to add the water little by little.

When we see that the mixture is taking shape we start to knead with the hands and if you see that the dough is very dry keep adding water until you can make a ball with it, do not expect a smooth dough because it will be a somewhat rustic dough.

Now let it rest for about 30 minutes, they say it is always good to let the dough rest, cover the dough while it rests.

Now to take advantage of the time we are going to prepare a very simple sauce.

We are going to chop the garlic and cilantro finely.

Add 3 tablespoons of olive oil, a teaspoon of salt, a pinch of black pepper and mix, so that all the ingredients are well integrated.

And set aside.

When the resting time of our dough has passed, we preheat the oven to 180 Degrees.

And then we begin to make our balls, I used a measuring spoon, and took about 1/2 tablespoon of mixture and began to give the desired shape.

With the palm of one hand I take the mixture and with the fingers of the other hand I give the ball shape, that's the easiest way I got.

We put all our balls in a floured mold or we can also use waxed paper as I did.

Now with a brush we spread the balls with the Garlic and Cilantro Sauce that we had reserved.

Bake in the oven until golden brown, approximately 35 to 45 minutes, in my case it was 40 minutes.

After 40 minutes my baked dumplings are ready, let them cool and then plate and taste, well honestly I tasted them before serving them 🫣

But we are not done yet, because with the leftover mixture and the sauce that was left we are going to make the balls now but fried.

What we have to do is to mix these two ingredients knead it a little and from there we take the balls to fry them.

Once the balls are ready, we put them in a frying pan with hot oil that covers at least half of our balls.

We are going to fry until they are well browned.

Well we are done, I definitely liked the fried version better, I would have liked the baked version to win for being healthier, but the fried ones are so crunchy that it is hard to resist that texture, I asked my husband which one he liked better and he thought that both have their charm hahaha but definitely my dear husband thinks that almost everything is delicious, by the way, the texture inside is very soft in both versions.

One thing I do know that they lacked is a good sauce, I'm thinking about what to accompany them with, if you have any suggestions I'm open to listen to advice.

Thanks for joining me and for your support, God bless you! 🤗🙏
