Today I'm bringing you a super easy recipe, perfect for a weekend snack. We'll use ingredients you probably already have on hand, so let's keep things simple.
We'll make some cupcakes and fill them with guava jam, but if you don't have guava or don't like it, you can use any flavor of jam you prefer.

Haremos unos Ponquecitos y los vamos a rellenar con mermelada de guayaba, pero si no tienes o no te gusta la guayaba puedes usar el sabor de mermelada que prefieras.

The measuring cup I'm using is 250 ml.
-1 cup all-purpose flour (you can use whole wheat flour or oat flour).
-1 cup plant-based milk (almond, oat, soy, rice, etc.).
-5 tablespoons granulated sugar or panela (unrefined cane sugar).
-1 teaspoon baking powder.
-1/4 teaspoon salt.
-1 teaspoon vanilla extract.
-Guava jam (to taste; you can use your favorite flavor).
-Muffin tins.
La taza que estoy usando para medir es de 250 ML.
-1 taza de harina de trigo, puedes usar harina de trigo integral o harina de avena.
-1 taza de leche vegetal de almendras, avena, soya, arroz, etc.
-5 cucharadas de az煤car o panela granulada.
-1 cucharadita de polvo para hornear
-1/4 cucharadita de sal.
-1 cucharadita de esencia de vainilla.
-mermelada de guayaba, cantidad al gusto, puedes usar tu sabor preferido.

Preheat the oven to 180 degrees Celsius (350 degrees Fahrenheit).
Encendemos el horno a 180 grados.
In a bowl, we put the flour and baking powder, and sift these two ingredients together.
Then we add the sugar and salt and mix well.
We add the plant-based milk; I used oat milk, but you can use any plant-based milk.
Add the vanilla essence and mix until everything is well integrated and you have a homogeneous mixture.
Now we pour the mixture into our muffin tins. In this case, I used a 15 ml measuring spoon and added 4 spoonfuls to each tin so that they would all be the same size.
Then we add the jam, I added a little more than a teaspoon in the center of each cupcake, with the same mixture we cover the jam a little and put it in the oven for approximately 15 minutes, make sure to insert the pastry toothpick and that it comes out clean.
Once our cupcakes are ready, let them cool completely to room temperature before enjoying! 馃槏
Makes: 7 Cupcakes.
